Delicious one dish meal; Can be assembled up to one day ahead of time
- 3 medium zucchini, halved lengthwise
- 1 tablespoon olive oil
- 1/2 pound HOT Italian sausage, casings
- removed
- 1 onion, chopped
- 1 red bell pepper, chopped
- Salt and Pepper
- 1 cup whipping cream
- 1 teaspoon dried oregano
- 1/2 pound fontina cheese,grated
- 1/2 lb penne pasta
Roasted Pepper Pasta Salad

- Kosher salt
- 12 ounces mezzi rigatoni or other short tube-shaped pasta
- 3 roasted red peppers
- 6 cloves garlic, unpeeled
- 1/3 cup extra-virgin olive oil
- 1 lemon
- 8 ounces bocconcini (small mozzarella balls)
- 1 bunch fresh basil, leaves torn

- 2 1/2 lb chicken thighs with skin and bone
- 3 tablespoons olive oil
- 1 large onion, chopped
- 2-3 red bell peppers, cut into 3/4-inch pieces
- 2 to 4 jarred hot cherry peppers in vinegar, drained
- and finely chopped

- 4 cups thinly sliced unpeeled zucchini
- 1 cup coarsley chopped onion
- 1/4-1/2 cup butter
- 2 Tablspoons parsley
- salt and pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon basil
- 1/4 teaspoon oregano
- 2 eggs, well beaten
- 8 oz shredded mozzarella cheese
- 8 oz crescent rolls
- dijon mustard

- 2 cups all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup butter, softened
- 1 1/4 cups sugar
- 1 egg
- 1/4 teaspoon vanilla extract ( Iused 1/2 teaspoon)
- 1/4 teaspoon almond extract(I omitted)
- 1 cup canned pumpkin
- 1 teaspoon pumpkin pie spice
- 1/4 cup plus 1 cup brown sugar
- Whipped cream, for serving, optional
- Ground nutmeg, for serving, optional
Crockpot Pot Roast

Paula Deen inspired crockpot pot roast for those cold busy winter days!!
- House Seasoning:
- 1 (3-pound) boneless chuck roast
- 1 1/2 teaspoons House seasoning, recipe follows or
- you can do what I did and just season with
- sprinklings of salt, pepper, and garlic powder.
- 1/4 cup vegetable oil
- 1 onion, thinly sliced
- 3 bay leaves
- 3 or 4 beef bouillon cubes, crushed
- 2 garlic cloves, crushed
- 1 (10 3/4-ounce) can condensed cream of mushroom soup
- 1/2 cup Chardonnay , I used Merlot
- 1 cup salt
- 1/4 cup black pepper
- 1/4 cup garlic powder
- Mix ingredients together and store in an airtight container for up to 6 months
