No Bake Treat enjoyed by all
- 1 1/2 cups peanut butter
- 1 teaspoon vanilla
- 1 pound confectioners sugar
- 1 cup softened butter
- 2 1/2 cups graham cracker crumbs
- 12 oz semisweet chocolate chips
- 1 block paraffin wax
Chicken and Rice With Broccoli and Cheddar

Quick, delicious, one dish weeknight meal
- 4 boneless, skinless chiken breasts
- salt and freshly ground black pepper
- 1/2 cup flour
- 3 tablesponns vegetable oil
- 1 onion, minced
- 1 1/2 cups instant white rice
- 3 garlic cloves, minced
- 1 1/2 cups low sodium chicken broth
- 1 10oz pkg frozen broccoli florets,
- thawed
- 1 cup shredded cheddar cheese
- 1 teaspoon tabasco
Crispy Breaded Chicken Cutlets

Fantastic crispy coating, moist juicy chicken
- 1 cup unbleached all purpose flour
- 2 large eggs
- 3 cups Panko
- 8 chicken cutlets (1/4 to 1/2 inch thick)
- Salt and ground black pepper
- 3/4 cup vegetable oil
Broccoli Salad

Delicious broccoli salad. Great to take to a summer barbecue!
- Broccoli florets, cut into bite sized pieces
- Bacon cooked , drained on paper towels, and
- crumbled
- Red onion, chopped fine
- Cheddar cheese, cubed
- Grape tomaotes, cut into halves or fourths
- Dressing.
- A TASTE AS YOU GO DRESSING
- These are just general guidelines**
- DO NOT ADD all dressing to broccoli salad at once. Just to taste.
- 3/4 cup mayonaisse
- 1/2 cup sour cream
- 2-3 tablespoons red wine vinegar, more or less
- TASTE!!!
- Salt and pepper to taste
- Granulated sugar to taste
- Sometimes I add a clove or two of finely minced garlic.
- Amounts vary on how much you need. No specifics here. It's what you like.
Dulce de Leche Chocolate Chip Thumbprints

1. Whisk together flour, baking soda, and salt in a small bowl
- 1-1/2 cups all-purpose flour
- 1-1/2 teaspoons baking soda
- 1/8 teaspoon salt
- 1 stick (1/2 cup) unsalted butter, softened
- 1/2 cup sugar
- 2 large egg yolks, at room temperature
- 1 teaspoon vanilla extract
- 1 teaspoon honey
- 2 ounces semisweet chocolate squares, chopped (not
- chunky) I used semi sweet mini choc chips
- 1/4 cup dulche de leche (caramel spread)

- 2 large yellow onions
- 4 tablespoons butter
- 1/4 cup vegetable oil
- 1/4-1/2 teaspoon cayenne pepper ( I

Quick tasty weeknight dessert! Creamy, flavorful, easy to prepare!
- CRUST:
- 1 cup graham cracker crumbs
- 1/4 cup butter, melted
- 3 tablespons sugar
- FILLING:
- 1 package 8 oz cream cheese, softened
- 3/4 cup undiluted carnation evaporated milk
- 1/2 cup sugar
- 1 egg, lightly beaten
- 2 tablespoons all purpose flour
- 2 teaspoons vanilla extract
- 1/2 cup(3 oz) semi sweet chocolate chips, melted
Spinach Dip

Delicious spinach dip served in a bread bowl, Adapted from Knorr!
- 1 package (10 oz.) frozen chopped spinach, cooked,
- cooled and squeezed dry
- 1 container (16 oz.) sour cream
- 1 cup Hellmann'sMayonnaise
- 1 package Knorr® Vegetable recipe mix
- 1 can (8 oz.) water chestnuts, drained and chopped 3 green onions, chopped (optional..I opted not)
- Hollowed out bread bowl, rye or pumpernickel.
Hearty Chicken Vegetable and Noodle Soup.. Using Rotisserie Chicken! 30 Minutes!

Homemade soup in 30 minutes
- 4 Tablespoons Butter
- 1 onion, chopped
- 3 celery ribs, sliced thin
- 4 carrots, peeled and sliced into thin rounds
- 2 teaspons minced fresh thyme
- salt and pepper
- 8 cups low sodium chicken broth
- 3 ounces egg noodles (about 2 cups) Not the wide kind
- 1 rotisserie chicken, skin discarded, meat shredded
- into bite sized pieces (about 3 cups)
- 1 cup frozen peas
