Coconut Pineapple Smoothie

Blend
- Quick cooking oats - 1/4 cup (I have used Quaker oats)
- Chia seeds - 1-1/2 teaspoons
- Coconut Milk - 1 cup ( I have used home made.)
- Greek Yogurt - 1/4 cup
- Pineapple chunks - 1 cup (frozen works too. I have used fresh)
- Sugar - 2 teaspoons (Optional. Adjust to pineapple sweetness)
Buttermilk Pancakes - Vitamix!

Place buttermilk, eggs, oil, salt, and sugar into the Vitamix container and secure lid
- 2 cups (480 ml) buttermilk
- 2 large eggs
- 1/4 cup (60 ml) light olive oil
- 1/2 teaspoon salt
- 1/4 cup (50 g) granulated sugar
- 1 cup (125 g) all-purpose flour
- 1 cup (120 g) whole wheat flour
- 1/2 teaspoon baking soda
- 2 1/4 teaspoons baking powder
Garlic Roast Chicken with Rosemary and Lemon

Preheat oven to 450 degrees F
- 2 1/2 pounds boneless, skinless chicken breasts, cut into large chunks
- 6 cloves garlic, crushed
- 3 tablespoons fresh rosemary leaves stripped from stems
- 3 tablespoons extra-virgin olive oil, eyeball it
- 1 lemon, zested and juiced
- 1 tablespoon grill seasoning blend (recommended: Montreal Seasoning) or, coarse salt and black pepper
- 1/2 cup dry white wine or chicken broth
Cucumber Cups with Mango Salsa

makes 24 Peel every other 1/2 inch or so of cucumber
- 4 cucumbers
- 1/2 red bell pepper, diced small
- 1/2 yellow bell pepper, diced small
- 1/4 red onion, diced small
- 1/4 cup shredded carrots
- 1 mango diced
- 1 tablespoon minced fresh parsley
- 1/4 cup of your favorite salad dressing*
- or whisk equal parts rice wine vinegar olive oil and sugar (add any spices you like)

- 1 cup (230g) unsalted butter, softened to room temperature
- 1 and 1/4 cups (250g) granulated sugar
- 1/2 cup (100g) light brown sugar
- 4 large eggs, at room temperature*
- 1 Tablespoon vanilla extract
- 3 cups (375g) all-purpose flour, careful not to overmeasure*
- 1 Tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup (240ml) buttermilk*
- zest + juice of 3 medium lemons*
- 1 and 1/2 cups blueberries, fresh (258g) or non-thawed frozen (275g)
- 1 Tablespoon all-purpose flour
- CREAM CHEESE FROSTING
- 8 ounces (224g) full-fat cream cheese, softened to room temperature
- 1/2 cup (115g) unsalted butter, softened to room temperature
- 3.5 cups (420g) confectioners' sugar
- 1 - 2 Tablespoons (15-30ml) heavy cream*
- 1 teaspoon vanilla extract
- pinch salt
Baked Oatmeal

- 1/2 cup (50 grams) strawberries (frozen or fresh)
- 1 cup unsweetened vanilla soy, hemp or almond milk
- 2/3 cup (100 grams) rolled oats
- 2 tablespoons (14 grams) flaxseeds, ground
- 2 tablespoons (10 grams) walnuts
- 1 tablespoon (15 grams) poppyseeds
- 1 teaspoon (3 grams) cinnamon
- 1 Large banana
- 1/2 cup (50 grams) raspberries (frozen or fresh)

Citrus Couscous Cups

Cook's Note: To toast the almonds, arrange in a single layer on a baking sheet
- Vegetable oil cooking spray
- Flour, for dusting
- Two 9-inch unroll-and-bake store-bought pie crusts, such as Pillsbury
- 1/3 cup low-sodium chicken broth
- Zest of 1/4 large orange
- Juice of 1/2 large orange (about 3 tablespoons fresh orange juice)
- 3/4 teaspoon ground cumin
- 1/3 cup couscous
- One 11-ounce can mandarin oranges in light syrup, drained and coarsely chopped
- 1/4 cup slivered almonds, toasted and coarsely chopped
- 2 tablespoons chopped fresh flat-leaf parsley

- 15-16 oz can (2 cups) pumpkin
- 3 cups (680g) sugar
- 1 cup (200g) oil
- 2/3 cup (157g) water
- 4 eggs
- 3 1/2 cups (420g) flour*
- 2 tsp soda
- 1 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp ginger
Crunchy Honey Garlic Pork Chop

- Glaze:
- 6-9 pork chops (not too thick, or use boneless pork loin)
- 2 eggs
- 4 Tbs water
- 2 cups flour
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. garlic powder
- Canola or vegetable oil for frying chops
- 1 1/2 cups honey
- 1/2 cup brown sugar
- 1/2 tsp. ginger
- dash of cayenne pepper (to your taste)

- 1 Tbs chopped garlic
