Tomato Pie

Delicious southern dish - always a hit and never any left!
- 1 9-inch pie shell
- 3-4 tomatoes (small) or 2 large, sliced ~1/4 inch, salted and drained well on paper towels (about 10-15 minutes - this is VERY important)
- 1/2 yellow or red onion, or 3-4 scallions, chopped
- 1/4 cup sliced basil (about 8 leaves) and or 1 tsp Italian seasoning
- 1-2 cups grated cheese (combination of sharp cheddar and Monterey Jack, or Mozzarella or Gruyere or Parmesan any combo will do!)
- 3/4-1 cup mayonnaise
- Salt and freshly ground black pepper
Cheesy Italian Bacon Pie

Place an oven rack in the center of the oven and preheat to 450 degrees F
- One 9-inch frozen uncooked pie crust, thawed
- All-purpose flour, for dusting
- 1 tablespoon extra-virgin olive oil
- 4 ounces thinly sliced pancetta, chopped into 1/4-inch pieces
- 2 medium zucchini, ends trimmed, halved lengthwise, cut into thirds and then 1/4-inch pieces
- 2 large shallots, chopped (1/2 to 2/3 cup)
- 1 large clove garlic, finely chopped
- 4 large eggs, at room temperature
- 1 cup heavy whipping cream
- 1 cup (4 ounces) coarsely grated fontina cheese
- 2 tablespoons chopped fresh basil
- 1 teaspoon Dijon mustard
- 3/4 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon freshly grated or ground nutmeg
White Chocolate Filling

In the top of a double boiler, combine the white chocolate and milk
- 4 ounces white chocolate, chopped
- 1/4 cup milk
- 4 ounces cream cheese
- 1/4 teaspoon pure vanilla extract

Mix the seafood with sherry, lemon juice, and nutmeg
- 1 pound frozen shrimp, deveined, cooked and coarsely chopped
- 4 to 8 ounces crab or lobster, thawed, drained, and diced
- 2 tablespoons sherry
- 2 teaspoons lemon juice
- 1/8 teaspoon nutmeg
- 3/4 stick butter, 6 tablespoons
- 1/3 cup flour
- 2 cups half and half
- 1/2 teaspoon salt, or to taste
- 1/4 cup heavy cream
- 1 egg yolk
- 1/2 cup grated Cheddar cheese

- INGREDIENTS:
- 4 4 4 tablespoons flour - make sure you measure it right - or the cake is a lie!
- 4 4 4 tablespoons sugar
- 1 1 1 tablespoon unsweetened cocoa
- 2 2 1 1 1 2 - 1 egg is too much, 1 egg white is too eggy, 1 yolk is too dense, but 2 tblsp is just right!
- 3 3 3 tablespoons milk
- 3 3 3 tablespoons oil
- 3 3 3 tablespoons chocolate chips
- splash splash vanilla or other flavoring - try peppermint or cinnamon
- For a fudgier version, omit egg.
- 2: Mix your ingredients:
- to all of the dry ingredients to the mug and mix.
- Add the egg and combine well. It gets pretty pasty at the point.
- Stir in milk and oil.
- Add chocolate chips* and splash of vanilla. Stir well.
- if you don't have chocolate chips, try a broken up candy bar - I can't stress how much this amps the awesomeness of your cake

- 2 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg

3 Meat Meatloaf

If you or your loved ones do not like meatloaf, try the 3 meat version! It really adds flavor
- 1/3 + pound each ground pork, hamburger, veal
- 1 egg
- 1/2 cup panko breadcrumbs (breadcrumbs or crushed crackers work)
- 1/3 cup ketchup
- 1-2 tbsp. mustard
- 2 tbsp Worcestershire sause
- 1/2-1 chopped red onion
- 1/4 cup chopped green pepper
- 2 tbsp dried parsley (fresh if you have it!)
- 1-2 cloves fresh minced garlic or 1/2-1 tsp garlic powder
- salt and pepper to taste
