Soften ice cream until easy to mix with cool whip
- 2 pre-made Oreo cookie pie crust
- 1 8 oz. container Cool Whip
- 1 container Peppermint Ice Cream
- for topping: mini chocolate chips or peppermint chips or crushed oreos, optional
Pesto Ranch Crock Pot Chicken

Turn crock pot to high setting
- 8 boneless skinless chicken breasts
- 6 ounce jar of pesto
- 1 package Ranch Dressing Seasoning Mix
- 1/2 cup chicken broth
Thin Mint Cookie Gooey Cake Bars

1. Preheat oven to 350 degrees F
- 1 Yellow Cake Mix
- 1 stick softened butter
- 1 large egg
- 1 cup chocolate chips
- 1 cup Andes Mint pieces
- 1 small can Sweetened Condensed Milk
- 20 Girl Scout Thin Mint Cookies, broken into pieces
Butterfinger Cookies

In a mixing bowl, cream shortening and sugars
- 1 1/4 C butter-flavored shortening
- 3/4 C sugar
- 3/4 C packed brown sugar
- 1 egg
- 3 T maple syrup
- 1 t vanilla
- 3 C quick-cooking oats
- 1 3/4 C flour
- 1 t baking soda
- 3/4 C semisweet chocolate chips
- 2 Butterfinger candy bars (2.1 oz. each) chopped
Pebi's Winter Chili

If the final product is too spicy, add 1-2t red wine vinegar
- 2 pounds ground beef chuck
- 1 pound bulk Italian sausage
- 3 (15 ounce) cans chili beans, drained
- 1 (15 ounce) can chili beans in spicy sauce
- 2 (28 ounce) cans diced tomatoes with juice
- 1 (6 ounce) can tomato paste
- 1 large yellow onion, chopped
- 3 stalks celery, chopped
- 1 green bell pepper, seeded and chopped
- 2 T real bacon bits
- 4 cubes beef bouillon
- 1/2 of a beer
- 2 T chili powder
- 1 T Worcestershire sauce
- 1 T minced garlic
- 1 T dried oregano
- 2 t ground cumin
- 1 t Tabasco sauce
- 1 t dried basil
- 1 t salt
- 1 t ground black pepper
- 1 t paprika
- 1 t white sugar
- 1 (10.5 ounce) bag corn chips such as Fritos®
- 1 (8 ounce) package shredded Cheddar cheese
Pumpkin Spice Latte Cake

Spicy on the bottom, creamy on the top, with the perfect pinch of cinnamon
- 1 box spice cake mix
- 2 small boxes instant vanilla pudding
- 1/2 cup veggie oil
- 1 1/4 cup water
- 4 eggs
- 1 cup pumpkin
- 4 cups powdered sugar
- 1 stick butter, softened
- 3 to 4 splashes milk
- 2 tablespoons cinnamon
Chicken Cordon Bleu Casserole

Preheat oven to 350 F. Butter a 9- x 13-inch baking dish
- For the casserole:
- 1 whole cooked chicken, bones removed, meat diced or shredded (rotisserie chicken is excellent, should have 5-6 cups)
- 1/2 pound very thinly sliced deli-style honey ham, rough chopped
- 1/4 pound thin sliced baby Swiss cheese
- For the sauce:
- 4 tablespoons butter
- 4 tablespoons flour
- 3 1/4 cups milk
- 2 tablespoons fresh squeezed lemon juice
- 1 tablespoon dijon mustard
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon pepper
- salt, to taste
- For the topping:
- 6 tablespoons unsalted butter
- 1 1/2 cups panko bread crumbs
- 1 1/2 teaspoons crushed dried parsley
- salt and pepper to taste

- 1/2 pound of spaghetti (that's half a box), cooked and drained
- 4 ounces Velveeta cheese
- 1 can Rotel
- 1 can cream of mushroom soup (I always use the light variety)
- 1 tablespoon chili powder

Preheat the oven to 350°F
- 1/2 stick unsalted butter
- 1 cup brown sugar
- 1/4 cup natural peanut butter
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 1/4 cups all purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup milk or semi-sweet chocolate chips (I probably used closer to 1/2 cup!)
Shrimp Enchilada Soup

- 5 C chicken broth
- 3 C tortilla chips
- 1 lb medium fresh shrimp (peeled and tails removed)
- 2 4.5 oz cans green chiles, undrained
- 1 10 oz can diced tomatoes, undrained
- 2 T butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 C sour cream
- 1/4 C chopped fresh cilantro
- Shredded cheddar and mozerella cheese
