- 1 (18-ounce) box cake mix (Duncan Hines is the best)
- 2 tablespoons flour
- 3 eggs
- 1/3 cup vegetable oil
- 3/4 cup water
- 1 tablespoon baking powder
Parmesan Puffed Pastry Breadsticks

Preheat oven to 400 degrees
- 1 package puffed pastry
- 1/2 cup Parmesan cheese, freshly grated
- olive oil
- 1/2 tsp dried italian herbs
- sea salt
Strawberry Watermelon Chicken Salad

Cut the lettuce and place in a large bowl
- 2-3 heads of lettuce (such as butter crunch), washed, dried, cut in large pieces
- 2 cups of watermelon, cut in small chunks
- 2 cups of strawberries, sliced
- 2 cups of rotisserie chicken, chopped in small pieces
- 1/2 cup red onion
- 1/4 cup fresh basil, finely chopped
- 1/4 cup pesto
- 2 Tbsp. honey
- 2 Tbsp. lime juice

Preheat oven according to directions on cake mix box
- 1 yellow cake mix
- 2 Jiffy cornbread mixes
- Oil, milk, and eggs according to package directions
Peanut Butter Caramel Bars

Preheat oven to 350 degrees
- 1 box of yellow cake mix
- 1/2 cup vegetable oil
- 1 egg
- 1/3 cup milk
- 1 1/2 cups creamy peanut butter, divided
- 1 cup caramel topping (the kind you use on ice cream)
- 1 stick butter, softened
- 3 cups powdered sugar
- 1 tablespoon milk
Chewy Granola Bars

Heat oven to 350°. Mix all except chips or nuts with fork until moistened
- 1 1/2 cup Bisquick baking mix
- 1 1/2 cups quick-cooking oats
- 1 cup packed brown sugar
- 1/2 cup margarine or butter, softened
- 1 egg
- 1/2 cup semisweet chocolate chips, mini chips or chopped nuts (optional)
White Chicken Enchilada Casserole

1. Marinate chicken in a lime juice, cumin, salt and and Southwest seasoning
- 24 corn tortillas
- 1/2 cup onion chopped
- 1 can black beans, drained
- 2 C grilled chicken
- 2 C shredded Monterey Jack cheese
- 3 T butter
- 3 T flour
- 1 1/2 C chicken broth
- 1 C sour cream
- 1/3 C green salsa
- 1 T fresh cilantro, chopped
- more cilantro to sprinkle on top of casserole
Spinach & Chicken Noodle Soup

In your slow cooker, layer the first 6 ingredients
- 3 cups chicken stock
- 1 onion, chopped
- 2 (10 oz) cans cream of chicken soup
- 1 (10 oz) package of frozen spinach, thawed and all excess water squeezed out
- 1 pound boneless, skinless chicken breasts (uncooked)
- a little Salt and Pepper
- 2 cups uncooked short-cut pasta (I used shells but rigatoni or penne would work too!)
- Shredded Cheddar Cheese to garnish
Pioneer Woman's Restaurant Style Salsa

- 1 can (28 Ounce) Whole Tomatoes With Juice
- 2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
- 1/4 cup Chopped Onion
- 1 clove Garlic, Minced
- 1 whole Jalapeno, Quartered And Sliced Thin
- 1/4 teaspoon Sugar
- 1/4 teaspoon Salt
- 1/4 teaspoon Ground Cumin
- 1/2 cup Cilantro (more To Taste!)
- 1/2 whole Lime Juice

- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 cup butter, softened
- 3/4 cup packed brown sugar
- 1/4 cup white sugar
- 1 (3.4 ounce) package instant vanilla pudding mix
- 2 eggs
- 1 teaspoons vanilla extract
- 2 cups semisweet chocolate chips
- 1 cups chopped pecans (optional)
