Absolutely Ultimate Potato Soup

In a Dutch oven, cook the bacon over medium heat until done
- 1 pound bacon, chopped
- 2 stalks celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 8 potatoes, peeled and cubed
- 4 cups chicken stock, or enough to cover potatoes
- 3 tablespoons butter
- 1/4 cup all-purpose flour
- 1 cup heavy cream
- 1 teaspoon dried tarragon
- 3 teaspoons chopped fresh cilantro
- salt and pepper to taste
Banana Pudding Poke Cake

Prepare cake mix according to package directions for a 9x13 cake
- 1 (10 oz.) box yellow cake mix
- ingredients needed to make cake (eggs, oil & water)
- 2 (3.4 oz.) packages instant banana pudding
- 4 cups milk
- 1 (8 oz.) tub frozen whipped topping, thawed
- 20 vanilla wafers, crushed
Chocolate Lasagna

- 1 package regular Oreo cookies (Not Double Stuffed) - about 36 cookies
- 6 tablespoon butter, melted
- 1 (8-ounce) package cream cheese, softened
- 1/4 cup sugar
- 2 tablespoons cold milk
- 1 (12-ounce) tub Cool Whip, divided
- 2 (3.9-ounce) packages Chocolate Instant Pudding
- 3 1/4 cups cold milk
- 1 and 1/2 cups mini chocolate chips
Crunchy Honey Garlic Pork Chop

you can use chicken
- Glaze:
- 6-9 pork chops (not too thick, or use boneless pork loin)
- 2 eggs
- 4 Tbs water
- 2 cups flour
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. garlic powder
- Canola or vegetable oil for frying chops
- 1 1/2 cups honey
- 1/2 cup brown sugar
- 1/2 tsp. ginger
- dash of cayenne pepper (to your taste)
- 1/2 cup soy sauce
- 1 Tbs chopped garlic
- 2 Tbs butter
Better-Than-Crack Brownies

Mix brownies according to directions, and bake for 20-25 minutes in a 9 x 13 baking dish
- 1 batch brownies (boxed mix or oooey gooey brownies)
- 1/2 cup salted peanuts (if don’t have salted, add sea salt)
- 1 cup chopped Reese’s peanut butter cups
- 1 1/2 cup milk chocolate chips
- 1 1/2 cup creamy peanut butter
- 1/2 tablespoon butter
- 1 1/2 cups Rice Krispies Cereal
Buko Pie

Slightly Tweaked version of the original
- For the dough
- 1-1/2 cup all purpose flour
- 1/2 tsp salt
- 6 Tbsp chilled unsalted butter, cut into small pieces
- 1 large egg, beaten
- ice water
- For the filling
- 1 cup young coconut juice
- 1/3 cup cornstarch
- 1 cup heavy cream
- 1-1/2 cups sugar
- 1 - pound packages of frozen shredded unsweetened young coconut, thawed, and drained or 4 cups shredded young coconut
- ( I could not easily find Unsweetened coconut, so I substituted with Sweetened and cut back on the amount of added sugar to only 1 cup)
- For the Egg Wash
- 1 large egg yolk
- 1 tablespoon milk
Meat & Potato Pie

1. Place ground beef, onions, potatoes and carrots in a large skillet
- 1 lb. ground beef
- 1 onion, diced
- 1 1/2 – 2 lbs. potatoes, diced
- 3 carrots, peeled and sliced
- 1 t. salt
- 1 t. garlic powder
- 1 t. paprika
- 1/2 t. black pepper
- I added the next 3 to original recipe. This really doctored it up a bit
- 1/2 t. Sage
- 1/2 t. Cumin
- 1 tbsp Worcestershire Sauce
- 1/4 c. flour
- 1 3/4 c. beef stock
- Pie crust for double crust 9 inch pie
Chocolate Eclair Cake

Preheat oven to 400. Lightly grease a 9″X13″ glass baking pan
- 1 cup water
- 1/2 cup butter
- 1 cup flour
- 4 large eggs
- 1 (8 ounce) package cream cheese, softened
- 1 large box (5.1 ounces) vanilla instant pudding
- 3 cups milk
- 1 8 oz. container cool whip (you won’t use the whole container) or one batch of homemade whipped cream chocolate syrup or homemade chocolate sauce
Farmer Casserole

Arrange hash browns evenly in the bottom of the dish
- 6 cup frozen shredded hash browns
- 1 1/2 cup shredded Cheddar cheese
- 2 cups diced cooked ham
- 1/2 cup sliced green onions
- 8 large beaten eggs
- Two 12-ounce cans evaporated milk
- 1/4 tsp salt
- 1/4 tsp pepper
Wendy's Chili

As close as you can get to the recipe from the restaurant chain
- 2 lbs Ground Beef. (80% or better)
- 1 qt Tomato Juice. (I substitute with Crushed Tomatoes)
- 1 (29oz) can Tomato Puree
- 1 (15oz) can Red Kidney Beans - DRAINED. (More if you like it thicker)
- 1 (15oz) can Pinto Beans - DRAINED
- 1 Med-Large Onion, chopped. (abt 1/2 Cup)
- 1/2 cup diced Celery
- 1/4 cup diced Green Bell Pepper
- 1/4 cup Chili Powder (more or less to taste)
- 1 tsp Ground Cumin (use more for real flavor)
- 1-1/2 tsp Garlic Powder
- 1 tsp Salt
- 1/2 tsp Ground Black Pepper
- 1/2 tsp Dried Oregano
- 3 tsp Sugar
- 1/8 tsp Cayenne Pepper
