Quinoa Cakes. Add quinoa, and broth to a large pot
- 1 cup quinoa, well rinsed
- 1 1/2 cups chicken broth
- 2 cups Cauliflower, chopped
- 1/2 cup cheddar cheese, shredded
- 1/2 cup parmesan Cheese, plus more for dusting
- 1 egg
- salt and pepper to taste
