Combine the salt, garlic powder, cumin, black pepper and cayenne in a plastic gallon bag
- 2 teaspoons salt
- 1 teaspoon garlic powder
- 1/2 teaspoon dried cumin
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- One 3 1/2-to-4-pound chicken, cut into 8 serving pieces and skin removed
- 3 tablespoons vegetable oil
- 1 small yellow onion, finely diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 1/2 teaspoons salt
- 1 1/2 cups long-grain rice
- 2 cloves garlic, finely diced
- 1 1/2 cups low-salt chicken stock
- 1/2 cup tomato sauce
Mexican Brown Rice Salad

Directions Preheat the grill to medium-high heat
- 2 ears corn, husked
- Olive oil, for brushing
- 1 cup cooked brown rice
- 2 (15-ounce) cans pinto beans, drained and rinsed
- 1 red bell pepper, seeded and finely chopped
- 1 bunch green onions, sliced
- 1 small jalapeno, seeds and rib removed, diced
- 3 tablespoons olive oil
- Juice of 1 lime
- 1 teaspoon cumin
- 1 clove garlic, finely chopped
- 3 tablespoons chopped fresh cilantro
- Kosher salt and freshly ground black pepper
- 1 cup crumbled queso fresco or feta cheese
Bacon, Sausage and Sauerkraut Pie

On a lightly floured sheet of wax paper, roll dough into a 13-inch circle
- Dough for one 9-inch piecrust (see above for our favorite recipe or use premade)
- 6 slices thick bacon, cut into 1/2-inch pieces
- 1 large onion, halved and thinly sliced
- 1 lb sauerkraut, drained and squeezed dry
- 1/4 tsp caraway seeds, optional
- 3 large eggs
- 1 1/2 cups sour cream
- 1/2 cup whole milk or half-and-half
- 1 Tbsp Dijon mustard
- 2 tsp flour
- 3/4 tsp salt
- Freshly ground black pepper to taste
- 1 1/2 cups grated Swiss cheese
- 6 oz cooked bratwurst or kielbasa, cut into bite-size pieces
Raspberry Cream Cupcakes

- 1 (18.25-ounce) box white cake mix (recommended: Duncan Hines Moist Deluxe)
- 1 1/3 cups water
- 3 large eggs whites
- 2 tablespoons unsalted butter, melted
- 2 teaspoons almond extract
- 2 teaspoons vanilla extract
- 2 (6-ounce) containers fresh raspberries, cut in half or 1 (16-ounce) container fresh strawberries, coarsely chopped
- 1 cup heavy whipping cream
- 1/3 cup powdered sugar, plus additional for dusting

Oatmeal Chocolate Chip Cookie 'Crack' Pie

- 9 " frozen pie crust, thawed
- 1 1/2 sticks (12 tablespoons) unsalted butter, softened
- 3/4 cup packed light brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 tablespoon pure vanilla extract
- 1 teaspoon kosher salt
- 1/2 cup unbleached all-purpose flour
- 3/4 cup rolled oats (not quick-cooking)

Curried Chicken Salad
