Texas Oven-Roasted Beef Brisket

Directions Preheat the oven to 350 degrees F
- 2 tablespoons chili powder
- 2 tablespoons salt
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon ground black pepper
- 1 tablespoon sugar
- 2 teaspoons dry mustard
- 1 bay leaf, crushed
- 4 pounds beef brisket, trimmed

- One 5-pound whole chicken, cut into 8 pieces
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried, crumbled Mexican oregano
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon salt, plus more for seasoning
- 1/4 teaspoon freshly ground black pepper, plus more for seasoning
- 1/4 cup olive oil
- 2 1/2 cups chopped white onion (from 1 large or 2 small onions)
- 2 cloves garlic, roughly chopped
- One 8-ounce can tomato sauce
- 1 1/2 cups chicken broth (homemade or store-bought low sodium)
- 5 pasilla chiles, soaked in warm water for 15 minutes and drained
- One 3.2-ounce disk Mexican chocolate, roughly chopped
- Toasted sesame seeds, for garnish

- 2 tablespoons olive oil, plus extra for grilling or sauteing if desired
- 3/4 cup finely chopped red onion
- 2 cloves garlic, finely minced
- 1 quart chicken stock or broth
- 1 cup coarse ground cornmeal
- 3 tablespoons unsalted butter
- 1 1/2 teaspoons kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2 ounces Parmesan, grated

DIRECTIONS: In a large bowl, combine everything but the egg roll wrappers
- 2 cups frozen corn, thawed
- 1 can (15 OUNCES) black beans, rinsed and drained
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dried
- 1 1/2 cup shredded Mexican cheese blend
- 1 can (4 ounces) chopped green chilies, drained
- 4 green onions, chopped
- 1/4 cup chopped cilantro
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon cayenne red pepper
- 1 package (21) egg roll wrappers
- 1 egg beaten for sealing egg roll (can substitute water)

- 1 tsp. dried oregano (orégano)

- 4 garlic cloves, peeled & minced or put through a garlic press (use more or less, to taste)
