Preheat the oven to 275 degrees F
- 2 poblano peppers, seeded and sliced
- 1 medium onion, sliced
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
- Kosher salt and freshly ground black pepper
- One 4 1/2-pound bone-in pork shoulder
- 1 1/2 cups chicken broth
- 4 jalapeno peppers, sliced
- 2 limes, zested and juiced
- 1 orange, zested and juiced
- For serving: corn tortillas, sliced radishes, pickled jalapeno slices, pico de gallo, hot sauce, lime wedges and fresh cilantro leaves

- 1 pound Brussels sprouts, ends trimmed and sliced into quarters
- 2 tablespoons olive oil
- Kosher salt and freshly ground black pepper
- 5 big handfuls baby arugula (5 to 6 cups)
- 1 Fuji or Gala apple, diced
- 1 cup red seedless grapes, sliced in half
- 1/2 cup crumbled feta cheese
- Simple Vinaigrette, recipe follows
- 3/4 cup olive oil
- 1/4 cup red wine vinegar (or your choice of vinegar)
- 1 tablespoon Dijon mustard
- 1 shallot, minced

- 2 1/2 pounds medium-size, firm eggplant, sliced lengthwise 1/2 inch thick
- 1 tablespoon plus 2 teaspoons kosher salt
- 3 cups dry bread crumbs
- 4 cups grated Grana Padano or Parmigiano-Reggiano
- 1 cup plus 2 tablespoons extra-virgin olive oil
- 4 large eggs
- 1/2 cup milk
- 1 1/2 cups All-purpose flour, for dredging
- 3 garlic cloves, crushed and peeled
- 14 ounces fresh spinach, washed and trimmed
- 5 cups marinara sauce (see recipe)

Bay Scallops With Spinach And Garlic

1. Heat 1 teaspoon on oil in a large pot over medium heat
- 2 Teaspoons Olive Oil
- 3 Cloves Of Garlic peeled and minced
- 1 Teaspoon Lemon zest
- 2 Pounds Fresh Spinach stemmed and (?washed?) but not dried
- 2 Teaspoons Kosher Salt or table salt
- 1 Unit Ground Pepper taste
- 1 Pound Bay Scallop
- 2 Tablespoons Fresh Lemon Juice
- 1/4 cup white wine (dry)

Add the potatoes to a large pot, cover with water and bring to a boil over medium heat
- 2 1/2 pounds sweet potatoes, 4 to 5 potatoes, peeled and cubed
- Salt
- 2 teaspoons orange zest
- 4 tablespoons butter, cut into pieces
- 1 cup creme fraiche or sour cream
- Freshly ground black pepper
- Freshly grated nutmeg, to taste
- 2 tablespoons extra-virgin olive oil
- 2 pounds ground turkey
- 1 large onion, chopped
- 2 small chile peppers, red fresno, jalapeno or serrano
- 1 red bell pepper, chopped
- 2 to 3 large cloves garlic, chopped
- 3 tablespoons chili powder (recommended: Gerhardt's)
- 1 tablespoon smoked sweet paprika
- 1 tablespoon ground cumin, a palmful
- 1 tablespoon ground coriander, a palmful
- 1/4 cup tomato paste
- 2 to 3 cups turkey or chicken stock
- 2 cups shredded sharp yellow Cheddar

- 1 1/2 cups milk

- 4 ounces Gruyere cheese, grated
- 3 ounces extra-sharp Cheddar, grated
- 2 ounces blue cheese, such as Roquefort, crumbled
