Green Chicken Enchiladas

Heat oven to 375 Take off paper husks from tomatillos
- 1 rotisserie chicken, meat shredded
- 2 lbs tomatillos (usually by the jalapenos, look like green tomatoes with green paper husk around them)
- 1 medium onion
- 3-5 dried chiles de arbol (optional)
- 1 jalapeno
- 1 cup loosely packed cilantro
- 2 Tablespoons vegetable oil
- 1 tsp garlic powder
- (you can look for canned tomatillos and make the sauce with that instead or use canned green chiles)
- 1 16 oz container of sour cream
- 4 cups grated Monterrey jack cheese
- 18 corn tortillas
Confetti Enchiladas

In a large bowl, combine cream of chicken soup substitute with green chili sauce
- 2 cups cooked brown rice
- 2 bell peppers chopped (red, orange, green, yellow- have fun!)
- 5-7 fresh mushrooms chopped
- 1 can of corn drained
- 1 can of black beans rinsed and drained
- 2 cloves of garlic minced
- 2 TBSP green chili sauce (more if you like a spicy kick)
- Juice of 1 lime
- Cream of chicken soup substitute (see recipe below)
- 8-10 whole wheat tortillas
- Cream of Chicken soup WHITE BEAN substitute
- 1 3/4 cup cool water
- 5 TBS white bean flour (dried white beans ground in wheat grinder- on coarse setting)
- 2 TBS Chicken or Faux-Chicken Seasoning (paste works great) (TO TASTE)
Avocado-Spinach Panini

1. Layer avocado slices, tomatoes, onion, and 1/2 cup spinach on each roll
- 2 avocados, halved and thinly sliced
- 1/3 cup julienned, smoked sun-dried tomatoes (1 oz.)
- 2 Tbs. diced red onion
- 2 cups lightly packed baby spinach
- 4 4-oz. ciabatta rolls, split in half
Vegetable Tostados

Heat oil in a large skillet over medium high heat
- 3 Tbs vegetable oil
- 2 cups corn kernels, cooked
- 1 cup chopped onion
- 3 cloves garlic, minced
- 4 medium tomatoes, roughly chopped
- 3 medium zucchini, diced
- 1 can black beans, drained and rinsed
- handful cilantro, chopped
- 1/4 tsp black pepper
- 8 tostados
- tomatillo or red salsa
- 1 cup grated Monterrey jack cheese or queso fresco
Pineapple Soy Tilapia with Basil CousCous

1. Place half of pineapple in a food processor with half of basil, soy sauce and lime juice and zest
- 1 1/2 cups fresh pineapple chunks, diced, divided
- 1 cup packed basil leaves, thinly sliced, divided
- 1 Tbs low-sodium soy sauce
- Juice and zest 1 lime
- 2 Tbs whole-wheat flour
- 1 lb tilapia fillets, cut into 4 pieces
- 1/2 tsp sea salt
- 1/4 tsp paprika
- 1 tsp plus 1 Tbs olive oil, divided
- 1 cup uncooked whole-wheat cous cous
- 2 cups frozen shelled edamame, rinsed under cold water

- Sauce:
- 2 Tbs olive oil
- 1/2 onion, diced
- 3 lb Roma tomatoes, peeled, halved, seeded and coarsely chopped
- 1 tsp fennel seeds, lightly crushed
- 3/4 tsp sea salt
- 1/2 tsp pepper
- 1 1/2 tsp fresh basil, chopped
- 1 1/2 tsp fresh oregano, chopped
- Sweetener-sucanat, stevia, honey to taste Or
- red wine vinegar, to taste

1. Prepare pancakes: in a medium bowl, mix both flours, wheat germ, oatmeal, sucanat, salt, soda and powder

- 1/2 cup oatmeal, blended
- 1 tsp sucanat

- 1 cup low-fat buttermilk
- 1 cup milk or unsweetened soy milk
- cooking spray
