- 12 tomatillos (3 lb.), divided

Chicken Parmesan Pasta Toss

grape tomatoes are simmered with basil to make a sauce then combined with chicken and parmesan cheese
- 1 lb boneless, skinless chicken breast 1/2 box of whole wheat pasta of choice
- 1 red onion, chopped
- 2 cloves garlic, minced
- 2 pints grape tomatoes
- 1 cup chopped basil
- 1 cup parmesan cheese
- 2 cups spinach or arugula

Chocolate Dream Cake

For Cake: Grease a 13 x 9 pan
- For Cake:
- 2 cups flour
- 2 cups sugar
- 1 tsp cinnamon
- 1 tsp baking soda
- ¼ tsp salt
- ½ cup butter
- ½ cup vegetable oil
- ⅓ cup cocoa powder
- 2 eggs
- ½ cup buttermilk
- 1 ½ tsp vanilla
- For Icing:
- 4-5 cups powdered sugar
- ½ cup cocoa
- ½ cup butter, softened
- 3 oz cream cheese, softened
- ⅓ cup boiling water
- 1 tsp vanilla

This Turkish soup features a delicious, healthful combination of lentils and whole-grain bulgur
- 6 teaspoons extra-virgin olive oil, divided
- 2 onions, chopped (1 1/2 cups)
- 3 cloves garlic, minced
- 2 teaspoons ground cumin
- 8 cups reduced-sodium chicken broth, or vegetable broth
- 1 1/2 cups red lentils, rinsed (see Tip)
- 1/3 cup bulgur
- 2 tablespoons tomato paste
- 1 bay leaf
- 3 tablespoons lemon juice
- Freshly ground pepper to taste
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper

- 2 large tomatoes, chopped
- 1/4 cup chopped fresh basil

- 12 ounces whole-wheat pasta

- 1 green bellpepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 3 T butter
- 1 can cream of mushroom
- 1 can cream of chicken
- 1 can of chicken broth or water
- 2 cups grated american/cheddar cheese blend
- 3 chicken breasts or 1 rotisserie chicken shredded
- 8 oz angel hair pasta
BBQ Chicken Quesadillas

1. Preheat oven to 200. Warm a skillet over medium heat
- 2 tsp olive oil
- 1 red onion, diced
- 4 cups baby spinach, roughly chopped
- salt and pepper
- 1/2 cup diced pineapple
- 3/4 cup corn kernels
- 1/4 cup chopped cilantro
- 1 cup slow cooker barbecue chicken from above
- 8 whole wheat tortillas, soft taco size
- 8 Tbs reduced fat or regular Monterrey Jack cheese
