Black Bean Soup-CrockPot

1. In a large pot over medium-high heat, place the beans in three times their volume of water
- 1/2 pound dry black beans
- 3 quarts water
- 1 carrot, chopped
- 1 stalk celery, chopped
- 1/2 red onion, chopped
- 3 cloves garlic, minced
- 1 green bell pepper, chopped
- 1/2 cup dry lentils
- 1 (14 oz) can peeled and diced tomatoes
- 1 TBS chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 2 TBS red wine vinegar
- 2 tsp salt
- 1/2 cup uncooked rice
Chocolate Chip Zucchini Muffins

Preheat over to 350 degrees
- 1 1/4 cups whole wheat pastry flour
- 1/4 cup unsweetened cocoa
- 1 1/4 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 whole banana, mashed
- 1 cup raw sugar- or sugar substitute
- (I used 1/2 cup sucanat and 1/2 date sugar. Agave Nectar could work)
- 1/2 cup unsweetened applesauce
- 1/4 cup non-dairy milk (I used vanilla soy milk)
- 1 cup shredded zucchini (I did a little more than this)
- Chocolate Chips- add as much or as little (Carob or Vegan OR any other kind that will help make your kids eat this delicious muffin!)
- Optional: Chopped walnuts
Cream of Cilantro Soup

Remove stems from cilantro and coarsely chop leaves
- 1 1/2 bunches cilantro, stems removed
- 64 oz chicken broth, stock or vegetable stock
- 4 T butter
- 4 T flour
- 2-8oz pkg cream cheese, softened
- 1-16oz container sour cream
- 2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp cayenne pepper
- 1/2 tsp ground cumin

Slow Cooker BBQ Chicken

- 6 frozen or fresh skinless, boneless chicken breasts
- 1 (12 ounce) bottle barbecue sauce
- 1/2 cup Italian salad dressing
- 1/4 cup brown sugar
- 2 tablespoons Worcestershire sauce
Black Bean and Rice Salad

1. In a small bowl combine lemon juice and oil
- 3/4 cup fresh lemon juice
- 2 Tbs oil of your choice: avocado, canola, olive, grape seed, vegetable
- 1 1/2 cup corn kernels
- 1 1/2 cups canned black beans, rinsed and drained
- 2 medium tomatoes, chopped
- 1 large red bell pepper, seeded and chopped
- 1 medium green zucchini, chopped
- 1/2 cup chopped green onions
- 3 cloves garlic, minced fine or pushed through garlic press
- 1/2 cup fresh cilantro, chopped
- pinch red pepper flakes
- 3 cups cooked brown rice
- salt and pepper to taste
Apple Caramel Bread Pudding

Preheat oven to 350. Peel, core and slice the apples 1/4 inch thick
- 4 Golden delicious apples (about 1 3/4 pounds) or whatever apple you prefer
- 2 Tbs butter
- 1/3 cup apple juice
- 2 tsp freshly squeezed lemon juice
- scant 1 cup sugar (divided)
- 8 oz french bread or baguette, cut into 3/4 inch pieces (about 4 1/2 cups)
- 1/2 cup water
- 1 1/2 cups heavy cream
- 3 cups milk
- 4 large eggs
- 5 large egg yolks
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1/4 tsp ginger

- 1 cup cooked red, black or pinto beans, drained and rinsed
- 1 cup cooked brown rice or quinoa
- 1/2 cup frozen corn, thawed
- 1 medium tomato, diced
- 1 small zucchini, diced
- 2 Tbs onion, finely chopped
- 1 clove garlic, minced
- 1/8 tsp chile powder
- 1/2 cup packed cilantro leaves, chopped
- 1 tsp olive oil
- 1/8 tsp sea salt
- 1/8 tsp pepper
- cooking spray
- 4 large poblano peppers, seeded and cut in half
- 8 Tbs shredded reduced-fat Mexican cheese blend
- 4 Tbs low-fat sour cream
Beef Stroganoff

Heat a large dry skillet over medium high heat for several minutes until hot
- 1 1/2 lbs top sirloin, sliced against the grain* and 1/4 inch thin or use 1 1/2 lbs ground beef
- 2 T vegetable, canola oil or olive oil
- 2-4 T butter
- 2 cloves garlic, minced
- 1 medium yellow or white onion, diced
- 2 cups mushrooms, sliced (1 lb)
- 1 cup beef stock or canned beef broth
- 1 cup sour cream, buy the pint because you may like more than me
- 2 T flour
- Salt and pepper
- 12 oz pkg cooked egg noodles or other pasta
Shepherd's Pie

Brown hamburger. Remove from pan
- Mashed potatoes:
- 1 lb hamburger
- 2 cloves garlic
- 3 Tbs butter
- 3 Tbs flour
- 1 can beef broth or stock
- 1/2 cup red wine (or extra beef broth)
- 1 1/2 Tbs tomato paste
- 1 tsp dried thyme
- 1/2 tsp pepper
- Salt to taste
- 1 bag frozen pearl onions
- 1 bag frozen peas and carrots mix
- 6 large russets or other potato
- 1/4 to 1/2 stick butter
- Enough Milk to thin- you want these thick
- Salt and pepper
