1. In a large pot over medium-high heat, place the beans in three times their volume of water

  • 1/2 pound dry black beans
  • 3 quarts water
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 1/2 red onion, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1/2 cup dry lentils
  • 1 (14 oz) can peeled and diced tomatoes
  • 1 TBS chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 2 TBS red wine vinegar
  • 2 tsp salt
  • 1/2 cup uncooked rice

Preheat over to 350 degrees

  • 1 1/4 cups whole wheat pastry flour
  • 1/4 cup unsweetened cocoa
  • 1 1/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 whole banana, mashed
  • 1 cup raw sugar- or sugar substitute
  • (I used 1/2 cup sucanat and 1/2 date sugar. Agave Nectar could work)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup non-dairy milk (I used vanilla soy milk)
  • 1 cup shredded zucchini (I did a little more than this)
  • Chocolate Chips- add as much or as little (Carob or Vegan OR any other kind that will help make your kids eat this delicious muffin!)
  • Optional: Chopped walnuts

  • 1/2 cup fresh cilantro, chopped

  • 1 lb hamburger
  • 2 cloves garlic
  • 3 Tbs butter
  • 3 Tbs flour
  • 1 can beef broth or stock
  • 1/2 cup red wine (or extra beef broth)
  • 1 1/2 Tbs tomato paste
  • 1 tsp dried thyme
  • 1/2 tsp pepper
  • Salt to taste
  • 1 bag frozen pearl onions
  • 1 bag frozen peas and carrots mix
  • 6 large russets or other potato
  • 1/4 to 1/2 stick butter
  • Enough Milk to thin- you want these thick
  • Salt and pepper
