Grilled Halibut with Chimmichurri

1. Combine the first 6 ingredients in a medium bowl
- 6 tablespoons chopped fresh cilantro
- 1/4 cup chopped fresh basil
- 1/4 cup finely chopped shallots or red onion
- 1 clove finely chopped garlic
- 6 tablespoons olive oil
- 6 tablespoons fresh lemon juice
- 1 teaspoon salt, divided
- 1/4 teaspoon freshly ground black pepper, plus 1/8 tsp pepper divided
- 4 (6-ounce) halibut fillets, or try with salmon, tilapia, tuna, cod, steelhead trout or chicken
Rainbow Couscous

veggies and any grain of your choice come to together for the perfect side
- 1 Tbs olive oil
- 1 red or orange bell pepper, seeded and chopped
- 1 small onion, chopped
- 3-5 cloves garlic, depending on your preference
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 1 small or baby eggplant, chopped
- salt and pepper
- 2 cups cooked couscous, rice, quinoa, pasta or orzo
Carrot Bread

Combine first six ingredients
- 3 cups flour
- 1 tsp soda
- 1 tsp cinnamon
- 2 cups sugar
- 3/4 tsp salt
- 1 cup pecans or walnuts, chopped
- 3 eggs
- 2 cups grated carrot
- 1 cup oil
- 1 8oz can crushed pineapple, drained
- 2 tsp vanilla
Summer Orzo Primavera

1. Bring a large pot of water to a rolling boil
- 1 cup whole-wheat orzo, dry
- 1 tsp sea salt
- 1 cup frozen baby peas and/or edamame, thawed
- 1 small red pepper, diced small
- 1 Tbs chopped fresh dill or 3/4 tsp dried dill
- 2 Tbs fresh squeezed lemon juice
- pepper to taste
Banana Pudding

Line bottom of a 9 x 13 with 1 bag cookies and layer bananas on top
- 2 bags Pepperidge Farm Cheesman cookies or Nilla wafers
- 6-8 bananas, sliced
- 2 cups milk
- 1 5oz box instant French vanilla pudding
- 1 8 oz pkg cream cheese, room temp
- 1 can sweetened condensed milk
- 1 12 oz container Cool Whip or sweetened whipped cream
Chicken and Biscuit Casserole

1. Preheat oven to 350. Lightly grease a 9x13 inch baking dish
- 1/4 cup butter
- 2 cloves garlic, minced
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped baby carrots
- 1/2 cup all-purpose flour
- 2 teaspoons white sugar
- 1 teaspoon salt
- 1 teaspoon dried basil
- 1/2 teaspoon ground black pepper
- 4 cups chicken broth
- 1 cup frozen mix veggies
- 4 cups diced, cooked chicken meat
- 12 leftover biscuits, baked
Sweet and Hot Fish Tacos

1. Place cherries, jalepenos, ginger and honey in food processor with 1/4 cup water
- 1 cup fresh or frozen pitted cherries (if frozen, no need to thaw)
- 1-2 jalepeno peppers, cut in half and seeded
- 1 2-inch piece ginger, peeled and quartered
- 4 tsp honey
- 1 lb tilapia
- 1/4 tsp salt
- 1 Tbs olive oil
- 8 whole-grain soft corn tortillas
- 1 small head radicchio, thinly sliced (8oz)
- 4 large carrots, peeled and grated (8oz)
- cilantro leaves for garnish
Lemon Lush

- 2 cups flour
- 1 cup butter, cut into small pieces
- 2 8 oz pkg cream cheese, room temp
- 1 cup sugar
- 2- 3.4 oz boxes instant lemon pudding mix
- 3 1/2 cups cold milk
- 1 12 oz container of Cool Whip or whipped cream
Spicy Chicken Pasta

Bowtie pasta in a spicy alfredo sauce with chicken, artichokes, mushrooms and sun-dried tomatoes
- 2-4 chicken breasts
- 2 T olive oil
- 1/2 1 lb box bowtie pasta, cooked in salted water
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 8oz pkg mushrooms, sliced
- 3 T flour
- 1 can fat free evaporated milk
- 1 cup milk, maybe more
- 1/2 cup cream
- 1/4 tsp cayenne
- 2 tsp dried basil
- 1 cup sliced sun-dried tomatoes
- 1 can arichoke quarters, drained
- 2 cups grated parmesan ceese
Chicken or Turkey Waldorf Salad

- 4 oz chopped chicken or turkey breast
- 2 cups chopped lettuce
- 1/2 chopped apple
- 1 chopped stalk celery
- 2 Tbs chopped walnuts
- 1/3 cup Greek yogurt
