Ingredients

  • 1 1/2 bunches cilantro, stems removed
  • 64 oz chicken broth, stock or vegetable stock
  • 4 T butter
  • 4 T flour
  • 2-8oz pkg cream cheese, softened
  • 1-16oz container sour cream
  • 2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper
  • 1/2 tsp ground cumin

Preparation

Step 1

Remove stems from cilantro and coarsely chop leaves. Process cilantro and chicken broth in a blender or food processor until blended.

Melt butter over medium heat and whisk in flour. Gradually add pureed cilantro, whisking until smooth. Boil 1 minute. Stir in cream cheese, sour cream, garlic, salt, cayenne and cumin.

Simmer 15 minutes. Soup can be served warm or cold.
