- 1/4-1/2 teaspoon black pepper
- Dash salt
- 1 teaspoon olive oil or cooking oil
- 1/4 cup chicken broth
- 1 10 - ounce package prewashed fresh spinach, trimmed (8 cups)
- 2 tablespoons walnut or pecan pieces, toasted
- 1 tablespoon lemon juice

Cheesy Tuna Noodle Casserole (Make-Ahead Recipe)

Directions 1.Lightly grease a 2-quart rectangular baking dish; set aside
- 3 cups dried wide egg noodles
- 1/4 cup butter

- 1/2 cup panko (Japanese-style bread crumbs) or soft bread crumbs
- 1/4 cup freshly grated Parmesan cheese (1 ounce)
- 1 tablespoon snipped fresh parsley
- 1 tablespoon butter, melted

- 1/2 pound spicy smoked sausage, cut into 32 (1/2-inch) pieces
- 32 wooden picks
- Lemon-Garlic Mayonnaise
- Garnish: fresh thyme sprigs
Chipotle Chicken Marinade

Place all ingredients into the blender or small food processor and puree for a few moments
- 6 tablespoons olive oil
- 2 tablespoons honey
- 4 large cloves garlic
- 4-5 chipotle peppers in adobo sauce* (I put frozen peppers directly into the blender)
- 1/2 teaspoon cumin
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 lbs of chicken, I used breasts, but any part of the bird would be excellent with this marinade
