Cherry Cream Cheese Coffee Cake

Preheat oven to 350°F. Spray a 9-inch square pan with baking spray
- Cake:
- 2 cups homemade baking mix or Bisquick
- 1/4 cup granulated sugar
- 2 tablespoons butter, melted
- 1/4 cup milk
- 1/2 teaspoon vanilla
- 1/2 teaspoon almond extract
- 2 eggs
- 1 can (21 oz) cherry pie filling
- Cream cheese layer:
- 1 package (8 oz) cream cheese, softened
- 1/4 cup sugar
- 1 egg
- Glaze:
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1/2 teaspoon almond extract
- sliced almonds, for garnish if desired
Spicy Shrimp Tacos with Garlic Cilantro Lime Slaw

Pulse all the sauce ingredients except the sour cream in a food processor
- Garlic Cilantro Lime Sauce:
- 1/4 1/4 1/4 cup oil
- 1/4 1/4 1/4 cup water
- 1/2 1/2 1/2 cup chopped green onions
- 1/2 1/2 1/2 cup cilantro leaves
- 2-3 2-3 to cloves garlic (less if you're sensitive to garlicky things)
- 1/2 1/2 1/2 teaspoon salt
- 2 of 2 limes
- 1/2 1/2 1/2 cup sour cream
- Shrimp Tacos:
- 1 1 1 lb. shrimp, peeled and deveined, tails removed
- 1 1 1 teaspoon each chili powder, cumin, and southwestern seasoning (see notes)
- 1/4 1/4 to teaspoon cayenne pepper (more or less to taste)
- 2-3 2-3 2-3 cups shredded green cabbage
- 8 8 8 small corn tortillas
- 1-2 1-2 1-2 avocados
- Cotija cheese and additional cilantro for topping
- lime wedges for serving
Marshmallow Crunch Brownies

Grease an 11×7 inch pan. Make brownies according to package directions
- 1 box brownie mix (18.9 ounce) made according to package directions*
- 3 cups miniature marshmallows
- 2 cups crisp rice cereal
- 3/4 cup milk chocolate chips
- 3/4 cup butterscotch chips
- 1/4 cup peanut butter
One Pot 30 Minute Creamy Tomato Basil Pasta Bake

- 1 pound fettuccine (use your favorite gluten free brand if needed)
- 1 tablespoon butter
- 1 cup chunky basil pesto (or store bought)
- 1-2 (8 ounce) jars of your favorite pasta sauce
- 1/3 cup enchilada sauce
- 1/2 cup oil-packed sun-dried tomatoes, oil drained
- 8 ounces sheep's milk feta cheese, crumbled (may sub regular feta, but the sheep's milk is creamier)
- 6 ounces fontina cheese, finely diced or shredded
- 2 ounces cream cheese, softened
- 1/2 cup heavy cream
- salt + pepper
- 6 ounces (or more) fresh mozzarella cheese, sliced
- fresh basil, for serving
- tom-tom (grape/cherry) tomatoes, halved, for serving

Preheat oven to 350F. Line two muffin tins with cupcake liners
- Cupcakes:
- 2 1/2 cups flour
- 2 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 stick of butter, at room temperature
- 1 3/4 cups sugar
- 2 large eggs, at room temperature
- 2 1/2 tsp. vanilla
- 1 1/4 cups whole milk, at room temperature
- Frosting:
- 2 sticks of unsalted butter, soft
- 4 oz of cream cheese
- 3-5 cups of powdered sugar
- 2 teaspoons vanilla extract
- For the mini "churros":
- 4 tablespoons of butter, cold
- 3/4 cup all purpose flour
- pinch of salt
- 1 tablespoon of sugar
- Cinnamon Sugar Topping:
- 1 cup sugar
- 3 tablespoons ground cinnamon
Snickerdoodle Cake with Brown Sugar Cinnamon Buttercream Frosting

To Make the Frosting: Beat together the butter, brown sugar and cinnamon until fluffy and pale in colour
- Frosting:
- 1 1/2 cups all-purpose flour
- 1 1/2 cups cake flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon
- 2 sticks butter (8 ounces by weight), softened to room temperature
- 1 3/4 cups fine or superfine sugar
- 4 large eggs, room temperature

- 2 1/2 cups (353g) all-purpose flour
- 1 tsp baking powder

- 1 cup (220g) granulated sugar
- 1 - 2 Tbsp lemon zest
- 4 Tbsp (56g) butter, softened
- 4 Tbsp (60ml) vegetable oil, divided
- 2 large eggs
- 1/2 cup (120ml) buttermilk
- 1/2 cup (125g) sour cream
- 3 Tbsp (45ml) fresh lemon juice
- 1 2/3 cups (250g) fresh blueberries

Cucumber Mint Gin Coolers
