Pan-Seared Lamb Chops with Cippolini Onions

Mix together the olive oil, balsamic vinegar, garlic and herbs
- 1 tbsp olive oil
- 1-2 tsp good-quality balsamic vinegar
- 2 tsp fresh garlic, minced
- 2 tsp fresh rosemary, minced
- 2 tsp fresh parsley, minced
- 4 lamb rib chops
- 10-12 whole Cippolini onions, skins removed
- 1 tbsp unsalted butter
- kosher salt and freshly-ground black pepper

Preheat oven to 425 degrees
- 3 ounces bittersweet chocolate
- 3/4 stick butter
- 1/4 cup all-purpose flour
- 3/4 cup confectioner's sugar

To make the BISCUITS: Preheat oven to 400 degrees F
- BISCUITS:
- 2 1/2 cups self-rising flour (if you don't have self-rising flour you can use 2 1/2 cups all-purpose flour + 1 tablespoon baking powder + 3/4 teaspoon salt)
- 1/2 cup (1 stick) unsalted butter, cold, cut into small pieces
- 1/2 cup sugar
- 1 cup buttermilk
- 1 cup chocolate chips, may need more for top
- CINNAMON SUGAR TOPPING:
- 1/4 cup sugar

- 1 1/2 cups flour
- 1/2 cup warm water

Berry Tart With Lemon Curd Mascarpone

For the tart crust Mix the all purpose flour, almond flour, kosher salt and powdered sugar in a large bowl
- For the tart crust:
- 1 1/2 cups all purpose flour
- 1/2 cup almond flour
- 1 teaspoon kosher salt
- 2 teaspoons powdered sugar
- 1/2 cup unsalted butter, 1 stick, very cold and diced into 1/4 inch pieces
- 1 egg yolk
- 1-2 tablespoons cold water
- For the mascarpone filling:
- 3/4 cup whipping cream
- 1 8 ounce container mascarpone cheese, at room temperature
- 1 heaping tablespoon powdered sugar
- 1 cup lemon curd, store bought, or I used this recipe
- 1 pint strawberries, hulled and sliced
- 1 pint raspberries
- 1/4 cup strawberry preserves
- Mint leaves for garnish

Preheat the oven to 350° and line 2 cookie sheets with parchment paper
- 8 oz cream cheese, room temperature
- 1 cup butter, room temperature
- 1 1/2 cups sugar
- 2 teaspoons vanilla
- 1 1/2 cups flour
- 1/2 cup cocoa powder
- 1 cup graham cracker crumbs, divided
Cherry Coke Float Cupcakes

1. Preheat the oven to 350º F and line muffin pans with cupcake liners
- CAKE
- 3 cups all-purpose flour
- 6 Tbsp. cocoa powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1/2 cups granulated sugar
- 1 cup unsalted butter, room temperature
- 2 large eggs
- 1 cup buttermilk
- 1 1/2 cups Coca-Cola (no Diet allowed!)
- 1 Tbsp. vanilla extract
- FILLING
- 1 (15-oz.) can cherry pie filling
- 1 Tbsp. cherry liqueur (optional)
- FROSTING

Easy Pineapple Orange Layer Cake

Preheat oven to 350 degrees
- Frosting:
- 1 package (18.25 oz.) yellow cake mix
- 1/2 cup vegetable oil
- 1 can (11 oz.) mandarin oranges, undrained
- 3 eggs
- 1/2 cup sour cream
- 1 (8 oz.) can crushed pineapple, undrained
- 1 package (3.5 oz.) instant vanilla pudding
- 2 cups heavy cream
Rustic Chicken with Garlic Gravy

Heat the oven to 400° F with rack in centre of oven
- 2 Tbsp. cooking oil
- 6-8 chicken thighs, skin on (could use any skin-on chicken pieces)
- Salt and freshly-ground black pepper
- 20-22 cloves of garlic (2 full heads), separated and peeled
- 2 Tbsp. flour
- 3/4 cup dry white wine
- 1 cup chicken broth
- 1 1/4 tsp. fresh thyme leaves (or about 3/4 tsp. dried leaves)
- 2 Tbsp. butter
Spanish Tapas Peppers

Preheat the oven to 375°F
- 1/2 cup cream sherry
- 1/2 cup golden raisins
- 3 medium red bell peppers
- 2 medium yellow bell peppers
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon minced garlic (3 cloves)
- 3/4 cup chopped green pitted olives (4 to 6 ounces with pits)
- 8 oil-packed anchovy fillets, drained and minced (leave out for vegetarian version; see Recipe Note)
- 1 large tomato, seeded and diced
- 1 scant teaspoon saffron threads, crumbled
- 2/3 cup coarse fresh bread crumbs from a baguette (crusts removed)
