  • For the Filling:
  • 1/2 cup sugar
  • 3 TBSP water
  • 1 1/2 cups salted peanuts
  • 1 1/2 About 1 1/2 cups store-bought dulce de leche
  • For the Topping:
  • 7 ounces bittersweet(I used semi since hubby doesn’t like bittersweet), coarsely chopped
  • 1/2 stick unsalted butter, cut into 8 pieces, at room temperature

In a large bowl, whisk together the egg yolks and sugar

  • 3 large egg yolks
  • 3/4 cup packed light brown sugar
  • 1 1/2 cups heavy cream
  • 1 1/2 cups whole milk
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • 3 large ripe peaches, peeled, halved, pitted, and cut into bite-size chunks
