Stir the yeast into the water in a mixer bowl; let stand until creamy, about 10 minutes

- For the dough:

- 6-1/2 oz. (1-1/2 cups) bleached all-purpose flour
- 3-1/2 oz. (3/4 cup) cake flour
- 1/4 tsp. table salt
