I really enjoyed these, my one suggestion would be to stretch out the puff pastry a little to fit all the stuffing ...
- 2 sheets puff pastry, thawed and rolled out
- 2 cups cooked chicken, cubed or shredded
- 1 (10oz) pkg. frozen chopped spinach, thawed and liquid squeezed out
- 1 roasted red pepper, diced
- 4 oz cream cheese, softened
- 1 c gruyere, grated
- 2-3 Tbsp fresh basil (or 2 tsp dried)
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 egg
- 1 Tbsp water
- parmesan cheese (optional, for garnish)

- 1 pound medium shrimp, peeled and deveined, with tail shell intact
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning - homemade or store bought
- 1/2 tablespoon chipotle peppers in adobo sauce, finely chopped
- 1/2 teaspoon brown sugar
- 1 lemon or lime, sliced in wedges for garnish
- Salt and pepper, for seasoning
Mint Brownies (aka Grasshopper Brownies or Creme de Menthe Brownies)

For the brownie: Preheat oven to 325 degrees
- Brownie
- 6 oz bittersweet chocolate chips - 60% cocoa (or chopped bittersweet chocolate. I recommend Ghirardelli)
- 1/2 cup unsalted butter, diced into tablespoons, plus more for baking dish
- 1 1/4 cups granulated sugar
- 1/2 tsp salt
- 3 large eggs
- 1/2 tsp vanilla extract
- 2 Tbsp cocoa powder
- 2/3 cup all-purpose flour
- Mint Cream Filling
- 1/2 cup unsalted butter, softened slightly
- 3 oz cream cheese, softened
- 1 1/2 tsp mint extract
- 5 drops green food coloring, or more/less as desired (optional)
- 2 1/2 cups powdered sugar
- 1 - 2 pinches salt, to taste
- Chocolate Topping
- 8 oz semi-sweet chocolate chips
- 5 Tbsp unsalted butter, diced into tablespoons
Slow Cooker Cashew Chicken

For the chicken: Trim any visible fat off the chicken
- For the chicken:
- 2 lbs boneless, skinless chicken thigh
- 1/4 cup all purpose flour
- 1/2 tsp black pepper
- 1 Tbsp canola oil
- For the sauce: (this should be doubled if you want plenty to pour over rice)
- 1/4 cup soy sauce
- 2 Tbsp rice wine vinegar
- 2 Tbsp ketchup
- 1 Tbsp brown sugar
- 1 garlic clove, minced
- 1/2 tsp grated fresh ginger (see Note)
- 1/4 tsp red pepper flakes
- 1/2 cup cashews
BLT Wraps

In a small bowl, toss quartered grape tomatoes with a dash of salt and pepper
- 10 slices bacon, cooked and crumbled
- 1 cup grape tomatoes, quartered
- Dash of salt and pepper
- 2 cups shredded lettuce
- 4 burrito sized tortillas
- 3 ounces cream cheese, softened (room temp is best)
- 1 tablespoon mayo
- 1 tablespoon dijon mustard

Directions: Prepare 4 sheets of foil and slice the hoagie rolls and set aside
- 4 hoagie rolls, sliced (We love the Publix hoagie rolls!)
- 1/2 green pepper, sliced
- 1 large white onion, cut in half and sliced thick
- 8 oz mushrooms, sliced
- 1.25-1.5 lbs beef ribeye steaks (sliced thinly across the grain and then chopped roughly again so they are small pieces)
- salt & pepper
- 3 1/2 Tbsp salted butter
- 8 slices of cheese (Provolone or Muenster)
Homemade Cheeseburger Macaroni

Instructions Go ahead and brown your ground beef in a fairly deep pan or pot (you'll be adding a lot of liquid)
- 1 lb ground beef, turkey or chicken
- 1 tbsp cornstarch
- 2 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- salt and pepper to taste
- 1 tsp sugar
- 1 cup hot water
- 2 cups milk
- 1 1/2 cups macaroni
- 1 cup shredded cheddar
