Smoothie Lemon Orange Refresher

Blend until slushy. Serves 5 (1 cup servings) 124 calories, 1 g fat, 25 g carbs, 5 g protein
- 1 cup fat free milk
- 6 oz reduced fat lemon yogurt
- 6 oz frozen orange juice
- 1 tbs honey
- 1 tsp vanilla
- 1/4 tsp orange extract
- 15 ice cubes
- 5 strips of orange or lemon peel for garnish
Black-Eyed Pea Gumbo (WW)

♥ Bring all ingredients to a boil except the rice
- 1/2 Cup Cooked Rice = 2 Points
- 7 oz. Healthy Choice Low-Fat Smoked Sausage
- 2 (15 oz.) Cans Fat-Free Black-Eyed Peas
- 2 Cups Fat-Free Beef Broth
- 1 (16 oz.) Package Frozen Vegetable Gumbo Mix
- 1 Tbsp. Dried Parsley
- 2 tsp. Hot sauce
- 1/2 tsp. Thyme
- 1/2 tsp. Ground Red Pepper
- 2 Cloves Garlic (Minced)
- 2 Bay Leaves
- Hot Cooked Rice
Tortilla Soup (The Mansion at Turtle Creek)

Prep Time: 30 minutes Cook Time: 1 hour 30 minutes
- 3 tablespoons corn oil
- 4 corn tortillas, coarsely chopped
- 6 cloves garlic, finely chopped
- 1 tablespoon chopped fresh epazote or cilantro
- 1 cup fresh onion, pureed
- 2 cups pureed fresh tomatoes
- 1 tablespoon ground cumin
- 2 teaspoons chili powder
- 2 whole bay leaves
- 4 tablespoons canned tomato puree
- 2 quarts chicken stock
- Salt
- Cayenne pepper
- 1 cooked chicken breast cut into strips
- 1 avocado, peeled, seeded and cubed
- 1 cup cheddar cheese, shredded
- 3 corn tortillas, cut in strips and fried until crisp
Oreo Ice Cream Dessert

1 package Oreos ½ C melted butter Mix above and freeze in a 9 X 13 pan
- 1 package Oreos
- 1/2 C melted butter
- Mix above and freeze in a 9 X 13 pan.
- 1/2 gallon vanilla ice cream, softened
- Spread over crust and return to freezer
- Hershey Fudge Topping
- Heat and pour over ice cream. Return to freezer
- Cool Whip
- Top with cool whip. Return to freezer
Strawberry White Chocolate Trifle

*I doubled the Mousse and added sugar cookies to get double layer in the large plastic bowl
- 2 21 oz cans of Strawberry Pie Filling
- 20-15 Sugar Cookies, roughly broken
- 2-3 tubs Fresh Strawberries
- White Chocolate Mousse
- 2 Cups Heavy Cream
- 4 TBS Sugar
- 1 8oz Cream Cheese
- 6 oz White Chocolate, Melted and Cooled
Biscuits

Preheat oven to 450 degrees
- 2 1/2 cups of Flour
- 1 Tablespoon Sugar
- 3 1/2 Teaspoons Double Acting Baking Powder
- 1 1/2 Teaspoon Salt
- 1/3 C (5 Tablespoons) Unsalted Butter, cut into pieces
- 1 cup Milk OR 1 cup Buttermilk plus 1/4 cup Milk

- 1 stick butter, melted
- 1 1/2 C Graham Cracker Crumbs
- 1 C coconut
- 6 oz chocolate chips
- 1 C pecans, chopped
- 1 can Eagle Brand Milk
Hushpuppies (Stagecoach Inn)

- 3/4 C Butter (real butter)
- 2 C plus 2 Tbs White Cornmeal
- 1/2 C (Scant) Sugar
