Chili Spaghetti (Diabetic)

Cook turkey. Add other ingredients (except spaghetti), bring to a boil, then reduce to a simmer
- 3 Cups of cooked Spaghetti
- 14 oz peeled, diced tomatoes, Italian style
- 15 oz Kidney beans, drained and rinsed
- 1/4 cup Salsa
- 12 oz ground extra lean turkey breast
- 3 tbs tomato paste
Peanut Butter Cake Icing

Very good! This makes enough to go between 3 cake layers
- 1/2 C Smooth Peanut Butter
- 1 Stick Softened Butter
- 1/4 Block Softened Cream Cheese
- 2 C Powdered Sugar
- 2 tsp Vanilla
- Pinch of Salt
- Milk to thin (1/8 cup . . . I maybe used 2 Tbs)
Vegetable Soup, Slow Cooker

Combine the first twelve ingredients in a slow cooker
- 1 lb round steak, cubed 1/2 inch
- 1 can (14 1/2 oz) diced tomatoes, undrained
- 3 C water
- 2 medium potatoes, peeled and cubed
- 2 medium onions, diced
- 3 celery ribs, sliced
- 2 carrots, sliced
- 3 beef bouillon cubes
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 1/2 C frozen mixed vegetables
Lemon Cheesecake, Almost Fat Free (Paula Deen)

Preheat oven to 325 degrees F
- Crust:
- Cooking spray
- 1 3/4 cups fat-free vanilla wafer cookie crumbs, or any fat-free cookie crumbs of your choice
- 1/4 cup unsalted butter, melted
- Filling:
- 3 (8-ounce) packages fat-free cream cheese
- 1 cup fat-free sour cream
- 2 cups sugar or sugar substitute (recommended: Splenda)
- 3 large eggs or 3/4 cup egg substitute
- 2 teaspoons lemon zest
- 2 tablespoons lemon juice
- Lemon Curd:
- 1 1/2 teaspoons lemon zest
- 6 tablespoons lemon juice
- 1 large egg, plus 1 large egg yolk
- 1/2 cup sugar or sugar substitute (recommended: Splenda)
- 2 tablespoons unsalted butter, cut into bits, or any fat-free butter substitute
Hashbrown Casserole

Mix put in a 9X11 pan, top with cheese, corn flakes, and bake at 350 for 45 minutes
- 1 Bag Hashbrowns
- 1 Stick Melted Butter
- 1/2 Sweet Onion (Sauteed in butter)
- 1 Can Cream of Chicken Soup
- 1/2 C (or less) Sour Cream
- 2 C Grated Cheese
- 1 tsp Salt
- 1/2 tsp Pepper
- 2 C Corn Flakes Crushed mixed with 1/4 C Butter as topping.
Chilis Skillet Queso

Copy Cat
- 16 ounce box Velveeta cheese
- 1 cups milk
- 2 teaspoons paprika
- 1/2 tsp ground cayenne pepper
- 15 ounce can Hormel Chili (No Beans)
- 4 teaspoons chili powder
- 1 Tablespoon Lime Juice
- 1/2 teaspoon ground cumin
Eggs-Fantastic Casserole (Old Republic Kristi)

Mix eggs and sour cream. Pour into a 9 x 13 pan
- 4 eggs
- 3 Tbs Sour Cream
- 5-6 Tbs Picante
- 8 oz Shredded Mozzarella
- 8-12 oz Mixed Mexican Style Cheese
- 1 Pd Sausage (or Taco Seasoned Meat)
- 8 oz Fresh Mushrooms
- Chili Powder
Lemon Bars (Paula Deen)

Preheat oven to 350 degrees F
- Crust:
- 2 cups all-purpose flour
- 1 cup confectioners' sugar, plus more for dusting
- Pinch of salt
- 1/2 cup (1 stick) butter, at room temperature, plus more for greasing
- Filling:
- 2 eggs
- 2 cups granulated sugar
- 6 tablespoons all-purpose flour
- 6 tablespoons fresh lemon juice
