Lentil Soup with Pineapples, Pears and Plantains

- 1 1/2 cups lentils, rinsed
- 8 cups water
- 1 white onion, stuck with 2 whole cloves
- 4 cloves garlic, peeled
- 1 bay leaf
- 1 tbsp olive oil
- 1/2 lb veggie chorizo, crumbled
- 4 ancho chiles, seeded and toasted
- 3/4 cup drained chopped canned tomatoes
- 1/2 inch cinnamon bark
- 1 black ripe plantain, peeled and cut into diagonal slices, 1/4 inch thick
- 1/2 cup chopped white onion
- 1/4 tsp dried oregano
- pinch of allspice
- 1 small pear, peeled cored and cut into 1/2 inch cubes
- 2 fresh pineapple slices
- 2 limes quartered
Polenta with Mascarpone, Maple Syrup and Toasted Pecans

In a small saucepan over low heat, warm the maple syrup
- 1/2 cup maple syrup
- 3 cups water, plus more as needed
- 1 1/2 tsp. salt
- 1 cup coarse-ground polenta
- 1 cup milk
- 1/2 cup mascarpone cheese
- 1/2 cup pecan halves, toasted and coarsely chopped

- 3 garlic cloves, cut in half
- Extra virgin olive oil, for brushing
- 2 tablespoons extra virgin olive oil for marinade
- 18 ounces skinless salmon fillets
- 2 tablespoons snipped chives
- 2 tablespoons lime juice
- Sea salt and fresh pepper, to taste

- 3 heaping tablespoons salmon roe

- 1/2 cup all purpose flour

- 6 tablespoons chilled unsalted butter, cut into 1/2-inch pieces
- FILLING
- 3/4 pound rhubarb, sliced 1/2 inch thick on sharp diagonal, 3 1/2 to 4 cups
