Chilaquiles with Poached Eggs and Black Beans

To make the tomatillo sauce, bring a large pt of water to a boil over high heat
- 12 tomatillos, husks removed
- 2 cloves garlic, chopped
- 1/2 small onion, chopped
- 2 jalepeno chilis, chopped
- 1/4 cup chopped fresh cilantro
- 2 tbsp canola oil
- 1 cup vegetable broth
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 cups canola oil
- 18-20 corn tortillas, 6 inches diameter, torn into strips
- 1/2 small yellow onion, chopped
- 1/4 lb Monterey Jack cheese shredded
- 2 tbsp chopped fresh oregano
- 1 can black beans
- 1 tsp fresh lemon juice
- 4-6 large eggs
- 1/4 lb queso fresco, crumbled
Soba Salad with Carrot and Zucchini

Whisk together lime juice, soy sauce, ginger, sugar, and oil in a large bowl
- 3 to 4 tablespoons fresh lime juice
- 6 tablespoons soy sauce
- 1 1/2 tablespoons finely minced peeled fresh ginger
- 1 1/2 teaspoons sugar
- 1/4 cup vegetable oil
- 1/2 lb soba noodles, freshly cooked to tender, rinsed under cold water, and drained
- 3 carrots, cut into 1/8-inch matchsticks
- 2 medium zucchini, cut into 1/8-inch matchsticks
- 1 bunch scallions, thinly sliced crosswise
Veggie Bacon, Lettuce, Tomato Jam, and Tuna Steak Sandwichs

Preheat the oven to 375 degrees
- 8 slices veggie bacon
- 2 tablespoons extra-virgin olive oil (EVOO), plus more for drizzling
- 1 red onion, chopped
- 2 cloves garlic, chopped
- Salt and pepper
- 1 cup loosely packed sun-dried tomatoes
- 2 tablespoons balsamic vinegar
- 2 tablespoons brown sugar
- 1 teaspoon Worcestershire sauce
- 4 6 - 8 ounces 3/4-inch-thick tuna steaks
- 1 tablespoon grill seasoning
- 4 large slices whole grain or peasant bread, halved
- 8 red-leaf lettuce leaves
Apple Oatmeal Pancakes

In a saucepan heat the apple juice to boiling and por over the oats and wheat germ in a bowl
- 2 cups apple juice
- 1 1/3 cups rolled oats
- 1/2 cup wheat germ
- 2 cups all purpose flour
- 1 tbs baking powder
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup buttermilk
- 1/4 cup maple syrup
- 4 tbs unsalted butter plus extra for greasing
- 2 large eggs
- 1/2 cup dried cranberries or cherries
- 2 large Granny Smith apples, peeled cored, and diced TINY

Strawberry Rhubarb Breakfast Cake

- TOPPING
- 2 tablespoons sugar
- 1/2 teaspoon ground cinnamon
- CAKE
- 4 eggs
- 1 1/3 cups sugar
- 3/4 cup canola oil, or walnut oil
- 3 cups all-purpose flour
- 2 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon ground mace
- 1 teaspoon salt
- 4 cups fresh strawberries, hulled and coarsely chopped
- 1 or 2 fresh rhubarb stalks, 4 oz. total, cut crosswise into 1/2-inch slices, or 1 cup thawed frozen sliced rhubarb
Spiced Honey

Italian Farro Salad

- 4 cups water
- 1 tsp salt
- 6 radishes, trimmed and thinly sliced
- 2 tomatoes, chopped
- 1 small cucumber, chopped
- 1/3 cup chopped pitted Gaeta or other black olives
- 1/4 cup fresh basil leaves, cut into narrow strips
- 3 tbsp EVOO
- lettuce leaves
- 4 hard boiled eggs, peeled and quartered
Three-Bean Salad

Cook edamame in a 1 1/2 - to 2-quart saucepan of boiling salted water, uncovered, 4 minutes
- 1 1/2 cups frozen shelled edamame (8 ounces)
- 1/4 cup olive oil
- 1 teaspoon ground cumin
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can black-eyed peas, drained and rinsed
- 1/2 cup chopped red onion
- 2 cups thinly sliced celery
- 2 tablespoons fresh lime juice
- 1/2 cup chopped fresh cilantro
- 1 teaspoon finely chopped garlic
- 1 1/2 teaspoons salt
- 1/4 teaspoon black pepper

- 2 bananas, peeled and cut diagonally 1/4 inch

- 2/3 cup milk
- 1 1/4 tsp. vanilla extract
- 1 Tbs. dark rum
- 1 tsp. salt
- 2/3 cup all-purpose flour
- 2/3 cup banana puree (about 2 bananas)
- 1/4 cup granulated sugar
- 1/2 cup pecan halves, lightly toasted
