Grilled Zucchini and Tomatoes with Feta Sauce

Prepare grill for cooking over medium-hot charcoal (moderate heat for gas)
- 3 oz mild feta cheese (preferably French; 1/2 cup)
- 1/4 cup sour cream
- 2 tablespoons water
- 2 teaspoons fresh lemon juice
- 1/2 teaspoon minced garlic
- 2 1/2 tablespoons extra-virgin olive oil
- 2 tablespoons finely chopped fresh basil
- 2 medium zucchini (1 lb total)
- 3/4 lb cherry tomatoes (preferably on the vine, cut into 4 bunches)
- 1/4 teaspoon salt

- 1 tbsp. unsalted butter
- 1 tbsp. extra virgin olive oil
- 4 garlic cloves, minced
- 3 oz thinly sliced pancetta, finely chopped
- 1 medium carrot, finely diced
- 1 medium onion, finely diced
- 1 celery rib, finely diced
- 1 lb coarsely ground beef chuck
- 1 lb coarsely ground pork
- 1/4 lb mortadella, cut into 1/4 inch dice (optional)
- 1 tbs tomato paste
- 1 cup dry white wine
- one 28oz Italian whole tomatoes, chopped, juices reserved
- 1 1/2 cups chicken or beef stock or low sodium broth
- 1/4 tsp freshly grated nutmeg
- 3 tbsp. chopped flat leaf parsley
- 2 tbsp. chopped basil
- salt and freshly ground pepper
- 1 lb spaghetti
- 1/4 cup heavy cream
- freshly grated parm cheese for serving
