Beer-Braised Chicken Thighs

In a small bowl, combine the flour, 1 tsp
- 2 tablespoons flour
- Salt and pepper
- 1/4 teaspoon ground allspice
- 8 bone-in chicken thighs (about 3 lbs.)
- 4 tablespoons butter
- 1 red onion, half finely chopped and half thinly sliced
- 1 cup pilsner-style beer
- 2 tablespoons chopped fresh parsley
- 2 carrots, cut into 2-inch matchsticks
- 1/2 pound green beans, cut into 2-inch pieces
Eggplant Parmigiana

Preheat the oven to 450 degrees F
- Extra-virgin olive oil
- 2 large eggplant, about 2 pounds
- Salt and pepper
- 2 cups basic tomato sauce, recipe follows
- 1 bunch fresh basil leaves, chiffonade
- 1 pound fresh mozzarella, sliced 1/8-inch thick
- 1/2 cup freshly grated Parmigiano-Reggiano
- 1/4 cup fresh bread crumbs, lightly toasted under broiler
- 1/4 cup extra-virgin olive oil
- 1 Spanish onion, 1/4-inch dice
- 4 garlic cloves, peeled and thinly sliced
- 3 tablespoons chopped fresh thyme leaves, or 1 tablespoon dried
- 1/2 medium carrot, finely grated
- 2 (28-ounce) cans peeled whole tomatoes, crushed by hand and juices reserved
- Salt
Strawberry Simple Syrup

Preparation Place the water, sugar and strawberry puree together in a medium saucepan
- 1 cup diced fresh strawberries
- 3/4 cup strawberry puree (made from about one cup of fresh strawberries)
- 3/4 to 1 cup sugar (or 1/2 cup if you want a less sweet simple syrup)
- 1 cup water
- 1/2 tsp. orange zest or lemon zest (optional)
- 1/2 tsp pure vanilla extract (optional)
- 2 tbsp. chopped, fresh mint, rosemary, basil or other herbs (optional)
- 1 tbsp. crushed cardamom pods (optional)
- 1.5 tbsp. balsamic vinegar (optional)
- NOTE: This Strawberry Simple Syrup recipe can be modified with various optional ingredients to suit your tastes. I recommend sticking to the basic recipe or using one optional ingredient per batch.
