1. Place chicken in a 4- to 5-quart slow cooker
- 1 1/2 pounds boneless, skinless chicken breasts
- 1 1/2 pounds boneless, skinless chicken thighs, trimmed of excess fat
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1 cup Dr Pepper soda
- 1 8-ounce can tomato sauce
- 2 chipotle peppers in adobo, seeded and diced
- 1/4 cup sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon salt
- 3 tablespoons balsamic vinegar
- 8 slices white cheddar or pepper Jack
- 8 soft egg buns
- Pickle slices
- Sliced red onion (optional)
Sour Cream Pancakes

In a small bowl, whisk together eggs and vanilla
- 1 cup Sour Cream
- 7 Tablespoons All-purpose Flour
- 2 Tablespoons Sugar
- 1 teaspoon Baking Soda
