Chocolate Candy Cane Cookies

Preparation Instructions Cream softened butter with powdered sugar
- 2 sticks Salted Butter, Slightly Softened
- 1 cup Powdered (Confectioners) Sugar
- 1 whole Egg
- 2 teaspoons Vanilla
- 2-1/2 cups Flour
- 1/2 cups Unsweetened Cocoa Powder
- 1 teaspoon Salt
- 4 ounces, weight (4 Squares) Almond Bark Or White Baking Chocolate (almond Bark Works Best And Is Cheaper)
- Large Handful Of Red Or Green Peppermints
Refried Beans

Rinse the beans thoroughly, then place them in a large pot with the bacon
- 6 cups dried pinto beans
- 4 slices thick-cut bacon, cut into 1-inch slices (or you can use salt pork, ham hock or diced ham instead)
- 1 tablespoon chili powder
- 1 teaspoon salt, plus more if needed
- 2 teaspoons black pepper, plus more if needed
- 1/2 stick butter (bacon grease, lard or shortening will work)
- 1 onion, diced
- 2 cups grated sharp Cheddar

The Best Green Beans Ever

Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer
- 1 pound green beans
- 2 tablespoons bacon grease (can substitute 2 tablespoons butter)
- 2 cloves garlic, minced
- 1 large onion, chopped
- 1 cup chicken broth, plus more if needed
- 1/2 cup chopped red bell pepper
- 1/2 to 1 teaspoon kosher salt (can substitute regular tablesalt, use 1/4 to 1/2 teaspoon)
- Ground black pepper
Shredded Beef Enchiladas

Place roast in a large saucepan that has a tight-fitting lid
- 3 pounds beef chuck roast
- 1/4 cup water
- 1 1/2 cups beef broth
- 3 tablespoons red wine vinegar
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 large onion, chopped
- 2 (4 ounce) cans chopped green chile peppers
- 1 tablespoon all-purpose flour
- 2 cups sour cream
- 3 cups shredded Monterey Jack cheese, divided

- 3/4 pound lean bacon

- 3/4 cup sour cream

- 3 tablespoons unsalted butter, melted
- 1 1/2 teaspoon dried chives
- 3/4 teaspoon salt
- 3/4 teaspoon ground black pepper
