- 1 1/2 pounds new potatoes, halved or quartered if large
- 1 tablespoon coarse salt, plus extra for seasoning

- 1 teaspoon sherry vinegar
- 1/3 cup chopped pitted Kalamata olives
- 1 tablespoon finely chopped fresh parsley

Braised Chicken Thighs with 40 Cloves of Garlic

Preheat the oven to 400 degrees F
- 40 large cloves hardneck or purple garlic, unpeeled
- 8 large skin-on, bone-in chicken thighs
- Kosher salt and freshly ground pepper
- 2 tablespoons EVOO
- 4 tablespoons butter
- 1 pound cremini mushrooms, thinly sliced
- 2 tablespoons finely chopped fresh thyme
- 1/2 cup Marsala wine
- 3 to 4 cups chicken stock
- 1 small bunch Tuscan kale or spinach, stemmed (if using kale, thinly slice)
- Freshly grated nutmeg
- Ciabatta bread, for mopping
Cilantro Lime Chicken with Salsa

- 4 (6oz) chicken boneless skinless chicken breast halves
- 1 tbsp lime zest
- 1/3 cup fresh lime juice
- 1/4 cup olive oil (plus more for brushing grill
- 1 1/2 tsp honey
- 1/3 cup chopped cilantro, plus more for serving
- 3 cloves garlic, minced
- salt and freshly ground pepper
- Salsa:
- 1 1/2 medium avocados (ripe but semi-firm) diced
- 2 medium roma tomatoes, chopped
- 1/2 cup chopped red onion, rinsed under cool water to remove harsh bite
- 1 clove garlic, minced
- 1 tbsp fresh lime juice

Put the potatoes in a pot and cover with the chicken broth
- 5 to 6 medium russet potatoes, peeled and cut into 1 1/2-inch chunks
- 3 cups chicken broth
- Nonstick cooking spray, for the baking dish
- 4 tablespoons unsalted butter
- 2 shallots, minced
- 1 clove garlic, minced
- 1 cup half-and-half
- 1 teaspoon kosher salt

- 1 (16 oz.) pkg. dried green split peas, rinsed
- 1 meaty hambone, 2 ham hocks, or 2 cups diced ham
- 3 carrots, peeled and sliced
- 1/2 cup chopped onion
- 2 ribs of celery plus leaves, chopped
- 1 or 2 cloves of garlic, minced
- 1 bay leaf
- 1/4 cup fresh parsley, chopped, or 2 teaspoons dried parsley flakes
- 1 tbsp. seasoned salt (or to taste)
- 1/2 tsp. fresh pepper
- 1 1/2 qts. hot water

Spiced Pork Chops with Sweet and Sour Glaze (Agrodolce)

Pork: In a large, heavy skillet, heat the olive oil over high heat
- 1/4 cup olive oil, plus extra as needed
- 4 (8-ounce) boneless pork chops, about 1 1/2 inches thick
- Kosher salt and freshly ground black pepper
- 1/2 teaspoon crushed red pepper flakes
- 1/2 cup balsamic vinegar
- 1/2 cup honey
- 2 cloves garlic, minced
- 3 scallions, pale green and white parts only, finely chopped
- 1 teaspoon chopped fresh rosemary leaves
- 1/2 stick (4 tablespoons) unsalted butter, cut into 1/2-inch cubes, at room temperature

Sesame Crusted Tuna Steak on Arugula

Sunny's Sheet Pan Shrimp "Boil"

Microwave the bag of potatoes for 6 minutes, then cut potatoes in half or quarters, depending on the size
- One 1 1/2-pound bag steamable red potatoes
- 2 ears corn, cut into thirds
- 1 lemon, cut into quarters
- 1 /2 pound andouille sausage, sliced in half lengthwise, then cut into 2-inch sections
- 4 tablespoons salted butter, melted
- 6 to 8 sprigs fresh thyme, finely chopped
- 2 pounds jumbo or colossal deveined shrimp (20 to 30 total)
- 2 heaping tablespoons seafood seasoning
- 8 ounces pilsner beer
