In a saucepan, combine the sugar, flour, and salt
- 3/4 cup white sugar
- 1/3 cup all-purpose flour
- 1/4 teaspoon salt
- 2 cups milk
- 3 egg yolks, beaten
- 2 tablespoons butter
- 1 1/4 teaspoons vanilla extract
- 1 (9 inch) pie crust, baked
- 4 bananas, sliced

Instructions Add yeast and 1 tsp sugar to the warm water
- Roll dough:
- 2 tsp active dry yeast plus 1 tsp sugar
- 1/4 cup warm water
- 1 cups milk
- 1 Tbsp. melted butter
- 1/4 cup sugar
- 3-4 cups flour
- 1 egg
- 1 tsp salt
- Cinnamon Honey Butter:
- 1/2 cup butter
- 1/2 cup powdered sugar
- 1/2 cup honey

Begin by preparing the pre-ferment
- For the pre-ferment:
- 7 ounces water, warmed to 110F
- 1/2 ounce dry active yeast
- 5 ounces bread flour
- For the dough:
- 2 1/2 ounces sugar
- 1 teaspoon salt
- 12 ounces whole milk
- 1 1/2 ounces water
- 2 pounds bread flour
- For the butter block:
- 1 pound 4 ounces butter (I use salted for croissants, but unsalted is also good)
- Egg wash:
- 1 egg
- 1 tablespoon cream
- 2 teaspoons water

Butternut Squash Soup

1. Heat the oven to 425°F and arrange a rack in the middle
- 4 pounds whole butternut squash (about 2 medium), halved lengthwise and seeds removed
- 2 tablespoons unsalted butter (1/4 stick)
- 1 medium Granny Smith apple (about 8 ounces)
- 1/2 medium yellow onion
- 8 fresh sage leaves
- 2 1/2 cups low-sodium vegetable or chicken broth
- 2 1/2 cups water
- 1 1/2 teaspoons kosher salt, plus more as needed
- 1/4 teaspoon freshly ground black pepper, plus more as needed
- 1/3 cup heavy cream
