- The Filling:
- Olive Oil (2 Tbsp)
- Ground Lamb or Beef (about 1.5 lbs)
- 1 Large Carrot (grated)
- 1 Large Onion (grated)
- Fresh Rosemary
- Fresh Thyme
- Minced Garlic (I used 4 cloves)
- Salt
- Pepper
- Worcestershire Sauce (several splashes)
- Tomato Puree or Paste (no more than a small can)
- Red Wine (several glugs)
- Chicken Stock (not sure, but it looks like about 1/4 cup)
- The Mash:
- Golden Potatoes (about 1.5 lbs)
- Heavy Cream ( 1/4 cup)
- Butter (3 1/2 Tbsp)
- Salt
- Pepper
- Egg Yolks (2)
- Parmesan Cheese (1/4 cup, minimum)
Wilted Spinach

- 4 cloves garlic, minced
- 1 pound triple washed spinach, stems removed

1.Heat one tablespoon of the butter and the olive oil over medium-high heat in a large Dutch oven or saucepan

- 2 cooked chicken breasts, either boiled or pan-fried
- 4-6 medium-sized zucchini and summer squash
- 2 large carrots
- 1/4 About 1/4 cup chopped cilantro
- 1-2 About 1-2 tbsp sesame seeds
- 1/2 cup peanut butter
- 1 tbsp soy sauce
- 3 tbsp rice vinegar
- 2 tsp sesame oil
- 1/2 tsp minced garlic (or more)
- 1/2-1 tsp granulated sugar (depending on taste)
- At least 1/4 cup water, add 1-2 more tablespoons depending on texture

- 1 1/3 cups all-purpose flour
- 2 1/2 Tbsp cornstarch
- 1 tsp baking powder

- 1/3 cup unsalted butter
- 3 Tbsp vegetable oil
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup milk
- 1/4 cup buttermilk
- 3/4 cup granulated sugar
- 3 Tbsp water
- 3 Tbsp salted butter
- 1/4 cup + 2 Tbsp heavy cream (poured into the same cup so it can be added all at once)
- 1/2 cup butter, at room temperature (I used 1/4 cup unsalted 1/4 cup salted)
- 1/4 cup + 2 Tbsp caramel sauce
- 2 cups powdered sugar
- 1/2 tsp vanilla extract
- 1 cup chocolate chips (I used 1/2 cup semi-sweet and 1/2 cup milk chocolate)
- 1/4 cup heavy cream
- 1 cup toasted coconut, cooled and slightly crushed into smaller pieces
Roast Pork Loin with Balsamic, Dijon & Thyme

- 1 1/2 cups fiddlehead ferns
- 1 1/2 cups asparagus tips
- 3 tablespoons butter, divided
- 1 1/2 tablespoons extra-virgin olive oil
- 2 large leeks, white and light green parts only, washed well, and diced.
- 2 scallions, white parts only, washed and minced.
- 1 clove garlic minced
- 2 cups arborio or carnaroli rice (also called risotto rice)
- 1/2 cup dry white wine
- approximately 5 1/2 cups hot vegetable or chicken stock
- zest of 1 large lemon
