- 4 4 heads 4 large heads of radicchio, each quartered through core end

- cup clover honey or other mild honey
- CHEESE COCKTAIL COOKIES
- 1/2 1/2
- cup unsalted butter, cut into chunks and slightly softened
- 4 4
- ounces blue cheese, cut into chunks and slightly softened
- 2 2
- ounces sharp cheddar cheese, cut into small pieces
- 1 1
- large egg
- 1 1
- tablespoon sugar
- 1/2 1/2
- teaspoon baking powder
- 1 1/2 1 1/2
- cups unbleached all-purpose white flour
- Red, pink, or white coars-crystal sea salt, or poppy or sesame seeds (optional)
Piri Piri Spice Mix

Instructions Just add all the powders to a mixing bowl Mix extremely well to form a smooth powder Store in air
- 1 teaspoon Salt (I like to use Black Salt)
- 1/2 teaspoon Cinnamon powder
- 1/2 teaspoon Cardamon powder
- 1/2 teaspoon Powdered Sugar
- 1/2 teaspoon Ground dry Ginger
- 2 teaspoons Paprika
- 2 teaspoons ground Cayenne Pepper or Piri Piri Pepper
- 1 teaspoon Hot Pepper Flakes (Chilli flakes)
- 2 teaspoons Garlic powder
- 2 teaspoon Oregano
- You can adjust any spice amounts to suit your taste
Maple-Black Pepper Wings

Preparation 1. Arrange a rack in the top third of the oven; preheat to 375°
- 3 lb. chicken wings (flats separated from drumettes), patted dry
- 1 tbsp. olive oil
- 1 tbsp. butter
- 1 shallot, finely chopped
- 1/2 tsp. smoked paprika
- 1/3 cup apple cider vinegar
- 1/3 cup pure maple syrup, preferably dark
- 2 heaping tbsp. red miso
- 2 1/2 tsp. crushed black peppercorns
- Chopped salted peanuts and chopped fresh mint leaves, for garnish
