Lean Mean Cheeseburger

1. Place oats in a plastic bag & grind to a fine consistency with a rolling pin 2
- Optional Ingredients:
- 1 lb grass-fed beef or bison
- 2 Tbsp quick cooking oats
- 1/2 tsp steak seasoning blend
- 4 sprouted grain hamburger buns, we use Food For Life brand (Ezekiel)
- 4 slices of cheese
- lettuce
- tomato
- onion
Blueberry Almond Smoothie

Blend until smooth! Enjoy!
- 1 cup blueberries(can be frozen)
- 1/2 cup plain nonfat yogurt (OR GREEK)
- 1/2 serving Vanilla Protein Powder
- 1/4 cup nonfat milk (or almond milk)
- 1 T slivered almonds
- 2 t ground flax seeds
- 1 t almond (OR VANILLA) extract
- (may need stevia or honey to sweeten)
Open Face Tuna Sandwich

Combine tuna with minced carrots, celery, red onion, mayonnaise, vinegar, salt and pepper
- 5 oz can albacore tuna (in water), drained
- 1/4 cup carrots, minced
- 1/4 cup celery, minced
- 1 tbsp red onion, minced
- 1 tbsp Hellman's Light mayonnaise (or greek yogurt)
- 1 tsp red wine vinegar
- salt and pepper, to taste
- 3 slices multi-grain bread, toasted
- 6 thin slices tomato
- 3 romaine lettuce leaves
- 1/2 medium haas avocado, thinly sliced
- 0.5 oz alfalfa sprouts
Pesto Pasta with Sun Dried Tomatoes and Roasted Asparagus

In a large pot of boiling salted water, cook pasta according to package instructions; drain well
- 8 ounces medium shell pasta
- 1 pound asparagus, trimmed
- Olive oil
- Kosher salt and freshly ground black pepper, to taste
- 1/2 cup basil pesto
- 1/3 cup julienned sun dried tomatoes, drained
- 1/3 cup diced low fat mozzarella cubes
Chia Seed Energy Bites

- Sauce:
- 3/4 cup(s) orange juice
- 1/4 cup(s) honey
- 2 tablespoon(s) low-sodium soy sauce
- 1 tablespoon(s) cornstarch
- 1 teaspoon(s) grated orange zest
- 1/2 teaspoon(s) hot red pepper flakes
- Stir-Fry:
- 1/3 cup(s) all-purpose flour
- 1/4 cup(s) whole-wheat breadcrumbs
- 2 egg whites
- 1 pound(s) boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 tablespoon(s) oil
- 2 teaspoon(s) minced garlic
- 2 cup(s) (6 ounces) broccoli florets, blanched
- 1 cup(s) (4 ounces) sugar snap peas
- 1 cup(s) (4 ounces) sliced mushrooms
- 1 red bell pepper, seeded, cut into thin strips

Dark Chocolate Date Cookies

1. Preheat oven to 375ºF
- 1/2 cup soft dairy-free margarine spread or butter, at room temperature
- 1 tsp vanilla extract
- 2 TBSP honey
- 1 cup “white” whole wheat flour
- 1/2 cup all-purpose flour
- 1/2 tsp baking soda
- 1 1/2 tsp egg replacer
- 1/2 cup finely chopped walnuts
- 1/2 cup diced dates
- 1/2 cup dark chocolate chips or broken dark chocolate pieces
Super Shrimp Saute

1. Heat 1 tablespoon olive oil in a large saute pan over medium-high heat
- 2 tablespoons extra-virgin olive oil
- 1 pound large shrimp, peeled and deveined
- 1 pint grape tomatoes
- 1/4 teaspoon kosher salt
- 1 15 ounce can no-salt-added garbanzo beans (chickpeas), rinsed, drained, and patted dry
- 1 tablespoon snipped fresh rosemary
- Freshly ground black pepper to taste
Strawberry Vinaigrette

place all ingredients in a blender, blend until smooth, adjust honey to taste
- 1/2 pound fresh strawberries
- 2 tablespoon honey
- 2 tablespoons apple cider vinegar
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
Bison Chili

1. Combine ground bison, onion, ground cumin and chili powder in a large stock pot and cook meat until browned
- 1 lb grass-fed ground bison
- 1 large sweet onion, diced
- 1 TBSP ground cumin
- 4 TBSP chili powder
- 2 large slicer tomatoes, cubed
- 2 cups organic, low-sodium chicken broth
- 3 cans organic red beans, rinsed and drained
