Spiced Sweet-Potato Fries

Preheat oven to 450°F. On a baking sheet, drizzle olive oil over potatoes and mix with hands to coat evenly
- 1 Tbsp extra-virgin olive oil
- 2 sweet potatoes (about 1 lb), cut into wedges
- 1/4 tsp hot Hungarian paprika
- 1 1/2 tsp Cajun seasoning, divided
Watermelon, Red Onion, and Feta Salad

Place the watermelon in a large bowl
- 1 medium watermelon, seeded and cubed
- 1/2 red onion, chopped
- 1 bunch mint (or basil), chopped
- 2 tbsp. olive oil
- 1 tbsp. balsamic vinegar
- sea salt and fresh-ground black pepper to taste
- 4 oz. feta cheese, crumbled
Caramelized brussels sprouts

First, set oven to 500 degrees (yep, that’s 500 degrees of HOT) and place a baking pan on the bottom rung to heat
- 1.5 pounds of Brussels sprouts (I only used 1 lb.)
- 3 Tablespoons of Extra Virgin Olive Oil (I used 2 Tbs.)
- 1 teaspoon kosher salt or 1/2 teaspoon of table salt (I used less then 1/2 a teaspoon of table salt)
- 1/2 teaspoon sugar (I used less then 1/2 teaspoon of white sugar)
- Lemon wedges, for serving
Avocado Strawberry Spinach Salad

Toss all salad ingredients together with your desired amount of dressing until combined
- 6 cups fresh baby spinach
- 1 pint strawberries, hulled and sliced
- 1 avocado, diced (or you can double this to 2 avocados!)
- 4 ounces crumbled gorgonzola or goat cheese
- 1/4 cup sliced almonds, toasted
- half a small red onion, thinly sliced (optional)
- Poppy-seed Dressing or Strawberry Vinaigrette
Soft Pretzels and Hummus

Mix thoroughly and knead for 5 minutes
- Hummus Recipe:
- 1 15oz can garbanzo beans (chickpeas) drained and rinsed
- 1 clove garlic, chopped
- 1/2 cup plain yogurt
- 2 TBL lemon juice
- 1 TBL olive oil
- salt
- pepper
- Blend up in food processor.
- Use for veggie dip, or bread spreads.
- Soft Pretzel Recipe
- 1 1/2 cup warm water
- 1 teaspoon yeast
- 2 tablespoons honey
- Dissolve in water and let sit for 10 minutes
- Then add:
- 1 teaspoon salt
- 4 cups flour
Gingerbread Smoothie

- 1 cup almond milk
- 1/2 frozen banana
- 2 tsp ginger (or fresh ginger)
- 1 cup 0% Greek yogurt
- 1 tbsp ground flax seed
- 1 tsp cinnamon
- 1 tbsp maple syrup
- 1 cup crushed ice
Roasted Green Beans with Mushrooms, Balsamic, and Parmesan

Preheat oven to 450F/230C
- 8 oz. mushrooms, sliced in 1/2 inch slices (I used brown crimini mushrooms, but any mushrooms will work)
- 1 lb. fresh green beans, preferably thin French style beans
- 1 1/2 T olive oil
- 1 T balsamic vinegar
- salt and fresh ground black pepper to taste
- 2 T finely grated parmesan cheese
Cheater-Pants Chicken Tortellini Soup

Put your water on to boil, with the chicken breast in it
- 8 c. water
- 1 1/2 lbs. boneless, skinless chicken breast
- 1 med. onion
- 2 cloves garlic
- 3 stalks celery
- 3 carrots
- Chicken soup base
- 1 family size package of fresh 3 cheese tortellini
Dark Chocolate Date Cookies

1. Preheat oven to 375ºF
- 1/2 cup soft dairy-free margarine spread or butter, at room temperature
- 1 tsp vanilla extract
- 2 TBSP honey
- 1 cup “white” whole wheat flour
- 1/2 cup all-purpose flour
- 1/2 tsp baking soda
- 1 1/2 tsp egg replacer
- 1/2 cup finely chopped walnuts
- 1/2 cup diced dates
- 1/2 cup dark chocolate chips or broken dark chocolate pieces
Loaded Turkey Santa Fe Baked Potato Skins

Potato skins loaded with ground turkey, black beans, corn, peppers, onions and cilantro
- FILLING:
- 7 medium (32-ounces) russet potatoes, washed and dried*
- 1/2 pound 99% lean ground turkey
- 1/2 cup canned black beans, rinsed and drained
- 1/2 cup frozen corn
- 1 hot pickled serrano pepper, chopped (or jalepeño)
- 1 large diced tomato
- 1 cloves garlic, minced
- 2 tablespoons onion, chopped
- 2 tablespoons cilantro, chopped, plus more for garnish
- 1 teaspoon cumin
- Kosher salt to taste
- TOPPING:
- 14 tablespoons reduced fat shredded cheese (I used Sargento Mexican)
- Nonstick spray (Smart Balance)
- 1/4 cup scallions, chopped
- Reduced fat sour cream or fat free Greek yogurt (optional, extra points)
