Grilled Tilapia with Salsa

1. Combine all salsa ingredients
- Salsa:
- 1/2 bell pepper (diced)
- 1/4 cup chopped cilantro
- 1 slice pineapple (diced)
- 1 avocado (peeled, pitted and diced)
- 1/4 tsp salt
- 1 tsp lime juice
- 1/2 jalapeno (seeded and diced)
- 2 tsp olive oil
- 2 tsp paprika
- 4 tilapia fillets
Banana Oatmeal Breakfast Muffins

1. Preheat oven to 400 degrees
- 2.5 cups old fashioned oats
- 1 cup plain low fat greek yogurt
- 2 eggs
- 1/2 cup honey
- 2 tsp baking powder
- 1 tsp baking soda
- 2 TBSP ground flax seed
- 1 tsp vanilla
- 2 ripe bananas
Veggie Wheat-Berry Salad

Soak wheat berries in a big bowl of cool water for at least 8 hours (up to 16 hours max)
- 1 Cup wheat berries preferably the soft white variety
- 1 lb tomatoes finely chopped
- 1 green bell pepper finely chopped
- 1 cucumber halved, lengthwise, seeded and finely chopped
- 3 celery stalks cut lengthwise into thirds and finely chopped
- 1/2 small red onion finely chopped
- 2 Tbsp Olive Oil
- 2 Tbsp fresh lemon juice
- 2 Tbsp red wine vinegar
- 2 tsp Worcestershire sauce
- 1/2 tsp Garlic Salt optional
- dashes hot red pepper sauce

Makes 6 half pears In small bowl: combine oats, 1/4 cup of light brown sugar, nuts, and melted butter
- For the Oatmeal Topping:
- 3 of your favorite seasonal pears (Bosch/Asian/Bjon)
- 1/4 cup of light brown sugar
- 1 tsp of water
- 2 TBSP butter (hardened coconut oil may work)
- 1/4 tsp of ground cinnamon
- 1/8 tsp of vanilla extract
- 1 cup of Quick Oats
- 1/4 cup of light brown sugar
- 2 TBSP butter (hardened coconut oil may work)
- Pecans, Peanut or Walnuts (chopped)
- Greek Yogurt
Superkid Summer Smoothie

- 1 cup nonfat milk

- 1 frozen banana, peeled and chopped

Delicious Maple Dijon Chicken

Preheat oven to 375 degrees
- 4 boneless, skinless chicken breasts
- 1/2 cup Dijon mustard
- 1/4 cup maple syrup
- 1 tablespoon red wine vinegar

Skinny Chunky Monkey Cookies

Preheat oven to 350°F. Mash bananas in a large bowl, then stir in remaining ingredients
- 3 ripe bananas
- 2 cups old-fashioned oats
- 1/4 cup creamy peanut butter
- 1/4 cup unsweetened cocoa powder
- 1/3 cup unsweetened applesauce
- 1 tsp. vanilla extract

Preheat oven to 350. Spray a 9×13 in pan with cooking spray or line with foil and then spray
- 2 cups quick-cooking oats
- 1/2 cup brown sugar
- 1/2 cup honey
- 1/2 cup peanut butter OR 1 stick butter, softened
- 3/4 cup raisins, dried cherries or cranberries, M&Ms, mini chocolate chips, sunflower seeds, sliced almonds or anything you like!
Chicken Noodle Soup

Combine 4-1/2 cups low-sodium chicken broth, 1 cup each chopped onion, carrot and celery, 1 tsp
- 4 1/2 cups low-sodium chicken broth

Avocado Chicken Salad

- 2-3 boneless, skinless chicken breasts
- 1 avocado
- 1/4 cup chopped onion
- juice of 1/2 a lime
- 2 Tbsp cilantro
- salt and pepper to taste
