Pickled Grilled Red Onions

Preheat an outdoor grill for high heat and lightly oil grate
- 2 small red onions
- 1/2 cup cider vinegar
- 1/4 cup sugar
- 1 teaspoon salt

- 1 cup frozen peas, thawed
- One 8-ounce ball fresh mozzarella, diced

- 1/2 teaspoon freshly ground black pepper
- 1 1/2 cups extra-virgin olive oil or neutral oil (such as canola or grapeseed)
Quick-Marinated Cherry Tomato Salad
