Easy Corn Fritters with Spicy Mayo

In a large bowl, combine corn, onion, garlic, and cayenne and stir together well
- 4 ears corn, kernels stripped
- 1/2 red onion, minced
- 2 cloves garlic, minced
- 1 tsp. cayenne pepper
- 2 large eggs, beaten
- 1/4 c. all-purpose flour, plus more if necessary
- kosher salt
- Black pepper
- 1 tbsp. extra-virgin olive oil
- 3 tbsp. mayonnaise
- 2 tsp. Hot sauce
Cinnamon Roll Cake

Preheat oven to 350 degrees F°
- CAKE:
- 3 cups All-Purpose Flour
- 1/4 teaspoon Salt
- 1 cup Sugar
- 4 teaspoons Baking Powder
- 1 1/2 cups Milk
- 2 Eggs
- 2 teaspoons Vanilla
- 1/2 cup (1 stick) Butter, melted
- TOPPING:
- 1 cup ( 2 sticks) Butter, softened
- 1 cup Brown Sugar
- 2 Tablespoons Flour
- 1 Tablespoon Cinnamon
- GLAZE:
- 2 cups Powdered Sugar
- 5 Tablespoons Milk
- 1 teaspoon Vanilla

- 2 pounds spicy Italian sausage
- 1 pound ground beef
- 16 (1-inch) bite-sized cubes of cheese, Asadero or your favorite
- 3 eggs
- 1 1/2 cups Parmesan or 3 cheese Italian blend, divided
- 2 teaspoon McCormick BBQ seasoning
- 1 cup BBQ sauce
- 16 slices of bacon
Pumpkin Cheesecake Lasagna

Preheat oven to 350 degrees
- 10 graham crackers, crushed
- 1 stick butter, melted
- 1/4 c. + 1/2 cup sugar
- 1 (8 oz) package cream cheese, softened
- 3 c. heavy cream
- 1 1/2 to 2 1/2 c. milk
- 3 small packages instant vanilla pudding
- 1 c. canned pumpkin
- 2 tsp. pumpkin pie spice
- 1/2 c. jarred caramel sauce
- 3 tbsp. powdered sugar
Green Bean, Mushroom and Caramelized Onion Tart

Melt the butter in a pan over medium heat
- 2 tablespoons butter
- 8 ounces mushrooms, sliced
- 1 small onion, sliced
- 1 clove garlic, chopped
- 1/2 teaspoon thyme, chopped
- 1/4 cup dry white wine or chicken broth or vegetable broth
- salt and pepper to taste
- 1/2 pound green beans
- 1 sheet puff pastry, thawed as directed on package
- 1/4 cup blue cheese, crumbled
Cornbread

Sift together cornmeal, cake mix, baking powder, salt, and cayenne in a bowl and set aside
- 2 cups yellow cornmeal
- 1 (9oz.) package yellow cake mix
- 1 t. baking powder
- 1 t. salt
- 1/8 t. cayenne pepper
- 1/2 C milk
- 1/2 C buttermilk
- 1/4 C vegetable oil
- 2 eggs, beaten
- 2 T light brown sugar
- 2 T honey
- 1 T plain yogurt
Stewed Rice

Cover rice with boiling water and let soak, off the heat, for 15 minutes
- Yield: 8 cups
- 1/2 pound rice (about 1 1/4 cups dried)
- 3 cups boiling water
- 1/4 cup olive oil
- 1 large onion, minced
- 3 whole cloves garlic
- 1 cup tomatoes, diced (canned is fine)
- 1 cup green peas (frozen is fine)
- 1 cup potatoes, diced 1/4 inch
- 1 teaspoon minced parsley
- 4 cups water
- Salt
Roasted Honey Carrots

Heat oven to 400°F. Combine brown sugar, butter and honey in bowl until smooth; set aside
- 1 tablespoon firmly packed brown sugar
- 2 tablespoons butter
- 2 tablespoons honey
- 4 cups baby carrots
- 2 tablespoons water
- Salt, if desired

- 500 g ground lamb
- 1 cup breadcrumbs
- 1 onion, chopped
- 1 clove garlic, crushed
- 1 teaspoon chopped chili
- 1 teaspoon ground cumin
- 1 fresh lemon rind
- olive oil flavored cooking spray
- 2 onions, sliced
- 1 red capsicum, seeded and chopped
- 1 tomatoes, chopped
- 1 ⁄2 cup red wine vinegar
- 1 ⁄2 cup water
- 1 ⁄2 cup brown sugar
