Spaghetti Squash with Mushroom Arrabbiata

Cook spaghetti according to directions
- 16 ounces spaghetti
- 2/3 cup parmesan cheese
- 1 cup ricotta cheese
- 4 large eggs
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 26 ounces marinara sauce
- 4 ounces shredded mozzarella cheese
- 1/4 cup bread crumbs
Mango Lime Ice

Combine all the ingredients in a blender or food processor and process until smooth
- 3 cups coarsely chopped peeled ripe mango -- (about 4 mangos)
- 1 1/2 cups water
- 1/2 cup fresh lime juice -- (about 6 limes)
- 1 cup sugar
- 2 teaspoons grated orange rind
Mu-Shu Chicken

Heat oil in a 12 inch skillet over medium heat
- 2/3 pound chicken breast halves
- 1 Tablespoon peanut or vegetable oil
- 1 or 2 bunches scallion
- 8 ounces coleslaw mix
- 1/2 cup sliced mushrooms
- 1/4 cup fruity white or blush wine
- 2 teaspoons cornstarch
- 1/4 cup soy sauce
- 1/2 teaspoon minced garlic
- 8 ounces broccoli slaw
- 1 cup shredded carrots
- 1 Tablespoon sesame oil
- flour tortilla
- hoisin sauce
Orzo Salad

- cooked orzo
- red pepper -- diced
- scallion -- diced
- 1/4 cup currants -- (1/4 to 1/2)
- 1/4 cup roasted sunflower seeds -- (1/4 to 1/2)
- 1/3 cup soy sauce -- (1/3 to 1/2)
Carrot, Zucchini, and Apple Muffins

Preheat oven to 375. Grease muffin tins or paper liners
- 3 large eggs
- 1 teaspoon vanilla
- 1 cup oil
- 2 cups flour
- 2 cups grated carrots
- 1 1/4 cups sugar
- 1 cup grated zucchini
- 1 golden delicious apple -- peeled and chopped
- 3/4 cup golden raisins
- 3/4 cup grated coconut
- 1/2 cup walnuts -- chopped
- 1 Tablespoon cinnamon
- 2 teaspoons baking soda
- 1 1/2 teaspoons grated orange peel
- 1/2 teaspoon salt

- 1/2 cup chopped onions
- 1 cup chopped celery
- 2 cloves garlic -- finely chopped

- 10 small stuffed green olives -- chopped
- 1 small bay leaf
- 1 teaspoon sugar
- 1 teaspoon dried parsley
- 1/16 teaspoon dried thyme
- 1/8 teaspoon salt

- 1 small zucchini -- cut into 1/4 inch pieces
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 egg
- 1 cup milk or soy milk
- 1 Tablespoon oil
- 1/2 teaspoon salt
- 2 cups cornbread mix
- 2 Tablespoons flour
Key Lime Sparkler Cookies

- 3 ounces unsweetened chocolate
- 6 Tablespoons unsalted butter -- at room temperature

- 1/4 teaspoon salt
- 2 large eggs -- at room temperature
- 2 teaspoons vanilla extract
- 1 Tablespoon instant espresso powder
- 3/4 cup sugar
