Simple Whole Roasted Chicken

In a bowl, mix the salt, sugar, cloves, allspice, nutmeg, and cinnamon
- 2 teaspoons salt
- 1 teaspoon white sugar
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground allspice
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground cinnamon
- 1 (4 pound) whole chicken
- 5 cloves garlic, crushed

The Best Meatballs

Combine beef, veal, and pork in a large bowl
- 1 pound ground beef
- 1/2 pound ground veal
- 1/2 pound ground pork
- 2 cloves garlic, minced
- 2 eggs
- 1 cup freshly grated Romano cheese
- 1 1/2 tablespoons chopped Italian flat leaf parsley
- salt and ground black pepper to taste
- 2 cups stale Italian bread, crumbled
- 1 1/2 cups lukewarm water
- 1 cup olive oil
Tuna Macaroni Salad

ou'll crave this salad once you try it, this also works well with chicken in place of the tuna, please do not omit
- 2 cups uncooked macaroni noodles
- 2 (6 ounce) cans tuna, drained (can use 3 cans)
- 4 -5 green onions, chopped or 1 onion, finely chopped
- 1 small green bell pepper, seeded and chopped
- 1 stalk celery, finely diced
- 1 1⁄2 cups chopped sweet pickles (can use more or less, do not squeeze out any juice from the pickles)
- 1 cup mayonnaise (I use half of each) or 1 cup salad dressing (I use half of each)
- 1 ⁄2 cup sour cream
- 2 tablespoons sweet pickle relish (optional or to taste)
- 1 tablespoon garlic powder (yes 1 tablespoon or even 1-1/2 tablespoons!)
- 1 -2 tablespoon prepared yellow mustard
- 1 teaspoon seasoning salt (or to taste, or use white salt)
- fresh ground black pepper (to taste)
- 1 ⁄2 teaspoon paprika
- 3 -4 hard-boiled eggs (quartered) (optional)
Beefy Chuckwagon Soup

Cook bacon in a large stockpot over medium-low heat
- 2 slices bacon, diced
- 2 pounds extra-lean ground beef
- 1 large onion, chopped
- 1 cup chopped celery
- 2 cloves garlic, minced
- 3 medium carrots, thinly sliced
- 2 cups beef broth
- 2 cans (14.5 ounces each) diced tomatoes in juice
- 1 can (4 ounces) chopped mild green chile peppers
- 1 teaspoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon ground chipotle pepper or a dash of cayenne pepper
- Freshly ground black pepper

Spinach Salad With Strawberries and Pecans

- 8 ounces fresh torn spinach or baby spinach
- 1 1/2 to 2 cups cleaned and sliced strawberries
- 1/2 cup pecan halves or pieces, lightly toasted
- 2 to 3 ounces goat cheese or blue cheese, crumbled, optional

German Chocolate Fudge

- 2 cups semisweet chocolate chips
- 12 (1 ounce) squares German sweet chocolate
- 1 (7 ounce) jar marshmallow creme
- 4 1/2 cups white sugar

- 1 (12 fluid ounce) can evaporated milk
- 1/8 teaspoon salt
