  • 1 1/2 c. shortening or butter

My potatoe salad recipe is all about flavor and festive colors

  • 2 1/2 Lbs white russet potatoes (half of a 5 lb bag)
  • 1 Lb small red potatoes (depending on the size approximately 6 to 10)
  • 2 cups Sour Cream
  • 3/4 cup Mayonnaise
  • 2 tbsp honey mustard OR 2 tbsp plain yellow mustard
  • 2 tbsp red wine vinegar
  • NOTE: If you don't have the red wine vingar you can substitute 2 tbsp of the dill pickle juice from your dill pickles.
  • 1 cup finely chopped celery
  • 1 cup fintly chopped green, red, yellow, or orange bell pepper OR any combination of these colorful peppers to equal 1 cup
  • 1 cup finely chopped green onions
  • 1/4 cup finely chopped red onion
  • (see pickling note for onions in the comment section below)
  • 2 or 3 tbsp finely chopped
  • fresh chives
  • 1 sm. jar of pimentoes (drain off some of the liquid)
  • 1/2 cup of sweet pickle relish
  • 1/4 cup of dill pickle relish
  • 6 hard boiled eggs roughly chopped
  • 1 cup of shredded or cubed sharp cheddar cheese
  • 1 tsp seasoning salt
  • 1/2 tsp black pepper
  • 2 tbsp finely chopped fresh dill OR 1 tbsp dried dill

  • 6 tablespoons olive oil
  • 2 lemons, 1 thinly sliced, 1 juiced
  • 4 cloves garlic, minced
  • 1 teaspoon salt

  • 8 small red potatoes, quartered
  • 4 chicken breasts (bones left in, with skin, about 3 1/4 pounds)

  • CAKE:
  • 1 cup water
  • 1 cup (2 sticks) butter or margarine
  • NOTE: I prefer using the butter over the margarine because the cake has a better flavor and it's a better more heart friendly option than using margarine in a recipe and using the butter does not affect it's moistness or texture.
  • 5 tbsp. cocoa
  • 2 cups sugar
  • 2 cups all purpose flour
  • 1 tsp. cinnamon
  • 1/2 cup buttermilk
  • 1 tsp. baking soda
  • 2 tbsp. pure vanilla extract
  • 2 eggs well beaten
  • ICING:
  • 1 stick (1/2 c.) butter or margarine
  • Note: I prefer butter over the margarine because the icing has more flavor and the texture is more smooth when using the butter. Also, believe it or not, it's a more heart friendly option and than using margarine in a recipe.
  • 6 tbsp. Half 'n Half, or milk, or evaporated milk
  • 1 tbsp. pure vanilla extract
  • 4 tbsp. cocoa
  • 1 box ( 1 lb.) of powdered sugar
  • 1 cup finely chopped pecans or walnuts
  • Note: Toasting the pecans or walnuts in a very hot skillet prior to adding them to the icing adds additional flavor, but this step is optional and may be omitted.

This cold salad is the best I have ever made

  • 1/2 cup mayonnaise OR 1/2 cup plain greek yogurt
  • 3 tablespoons chili sauce
  • Note: if your family doesn't like the heat that chili sauces gives, then simply use 1 or 2 tablespoons of ketchup and a couple of dashes of Worcestershire Sauce sauce instead
  • 2 tablespoons lemon juice
  • 1 teaspoon sugar
  • 3 cups cooked elbow macaroni
  • 1/2 cup tomato, seeded and chopped (I prefer roma tomatoes, but any kind will work so use your favorite or whatever you have in the refrigerator)
  • 2 tablespoons green onions, chopped
  • 1/4 cup sliced black olives "optional"
  • 3 cups lettuce, shredded
  • 4 slices cooked bacon, crumbled
