Green Tomato Ketchup

Home Canned Condiment recipe shared with me by Hallie Roope from West Virginia
- 1 Peck of Green tomatoes sliced thin (a peck is approximately 2 gallons liquid measurement, or 32 cups, or 8 quarts)
- 4 large onions finely chopped
- 4 large green bell peppers finely chopped
- 1/2 cup regular table salt or canning salt
- 1 pint apple cider vinegar (2 cups)
- 2 lbs sugar (4 cups)
- pickle spice to taste (about 1/4 cup)
- 12 to 15 [2 pint] canning jars and enough lids and bands to fit the jars
Tex Mex Guacamole

Guacamole may be used as a topper with tacos, enchiladas, fajitas, etc
- 6 avocados ( soft, but not mushy)
- 2 -4 garlic cloves, minced ( depends on how much you like garlic)
- 1 lime, cut in half
- 1 medium tomato, diced
- 1/2 medium onion, diced
- salt and black pepper to taste
- chopped cilantro (optional)
- 1 diced jalapeno peppers (optional) or 1 diced serrano pepper (optional)
Potatoe Soup

This is one of my go to down home comfort food recipes
- 4 slices bacon or **1 cup of cooked diced ham, optional substitute
- 4 tbsp melted butter to be used only if using the cooked diced ham
- 1 small sweet onion, diced
- 3 green onions, chopped
- 1/2 cup finely chopped celery
- 1 cup shredded carrots
- 1/3 cup plus 1 tablespoon flour
- 6 cups chicken stock ( I use my own home canned chicken stock but any store bought boxed chicken stock will do )
- 2 1/2 pounds russet potatoes, peeled and diced (approximately 9 - 10 Medium sized potatoes)
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 teaspoon garlic powder (optional)
- 2 pinches of poultry seasoning (optional)
- 3/4 cup heavy cream (Note: if you don't have heavy cream you can substitute canned evaporated milk, which is my preferred choice, or you may also substitute butter milk, my 2nd choice, or even whole milk, my 3rd choice)
- 1 (8-ounce) container sour cream or 1 cup of bottled prepared Hidden Valley
- Ranch Dressing
- 3/4 cup shredded pepper jack cheese or 3/4 shredded motazrella cheese
- 1 cup shredded cheddar cheese
- additional cheeses, green onion, crumbled sour cream N onion potatoe chips, or chopped fresh parsley for garnish
Crock Pot Pecan Pineapple Upside Down Cake

- What you need: 5 qt crockpot

- 1 box of pineapple cake mix (prepare according to box BUT substitute MILK for water) Duncan Hines is excellent
- 1 Tablespoon Rum or Orange extract (let your taste dictate)
- 1 Can pineapple rings or 1 fresh pineapple cut into 8 rings
- 1 Can maraschino cherries
- 1 Cup / 200 g brown sugar
- Small bag of pecans or walnuts
- 1/4 Cup / 60 ml pineapple juice
- 3 Tablespoons Butter
Chicken and Dumpling Casserole

Easy to put together casserole that is hearty and filling
- 2 chicken breasts, cooked and shredded ( you can use a store bought rotisserie chicken)
- 2 cups chicken broth
- 1/2 stick of butter
- 2 cups Bisquick
- 2 cups whole milk
- 1 can cream of chicken soup (the herbed cream of chicken soup if you can find it)
- 3 teaspoons of chicken granules (Bullion) or 3 cubes of chicken bullion: Note: be sure you break up the cubes into granuals
- 1/2 teaspoon dried sage
- 1 teaspoon black pepper
- 1/2 teaspoon of salt or more to taste
