- 1/2 cup yellow cornmeal
- 2 eggs (beaten with salt&pepper)

- oil (in Iron skillet and hot)
- 3 green tomatoes, sliced

Old-Fashioned Chicken and Cornmeal Dumplings

In a Dutch oven or large sauce pot, heat 1 tablespoon oil over medium-high heat
- For Dumplings:
- 2 tablespoons olive oil
- 6 large skinless boneless chicken thighs, trimmed and cut into 2-inch pieces
