- 1 large head of garlic, unpeeled
- 1 teaspoon olive oil
- Coarse salt and freshly ground pepper

Step 1
Preheat oven to 400 degrees F. Expose the cloves by cutting off the top of the garlic head, about 1/2 inch.
Place the garlic bulb in a small baking dish, cut side up (slice a little off the bottom to flatten it out, if necessary). Pour the olive oil over the top of the exposed cloves, sprinkle with salt and pepper, and cover the baking dish tightly with foil.
Roast for 45 minutes to 1 hour, until the cloves are very tender. Squeeze the cloves out of the skins and serve.
