- 2 pounds small- to medium-size carrots
- 1 cup sliced shallots
- 2 teaspoons fresh thyme
- 3 tablespoons extra-virgin olive oil
- Coarse salt and ground black pepper
Hamburger and Macaroni

1 Get a large pot of hot water heating and begin cooking the macaroni as per the directions on the macaroni package
- 2 cups uncooked macaroni (use rice pasta or gluten-free pasta for gluten-free version)
- 1 Tbsp olive oil
- 1 pound ground beef
- 1 yellow onion, chopped (or mixed chopped green onion greens and yellow onion)
- 1/2 teaspoon Vegesal or other seasoned salt
- Pinch chili pepper flakes
- 1/2 teaspoon celery seed
- 1 large can (28 oz) of diced tomatoes
- 2 Tbsp Worcestershire sauce
- 1/4 cup chopped fresh parsley
- Salt and freshly ground black pepper to taste
Spicy Seafood Pasta

Spicy Sauce: Saute onions, peppers and sausage in butter
- Spicy Sauce:
- 1/2 stick unsalted butter
- 1/4 c diced onion
- 1/8 c diced red bell pepper
- 1/8 c diced green bell pepper
- 12 oz Italian hot sausage, diced
- 1 tsp cayenne powder
- 2 tbsp Tabasco sauce
- 1/4 c cajun seasonning
- 1 tbsp Worcestershire sauce
- 4 c crushed fresh tomatoes
- 1/4 c tomato paste
- 2 tbsp dry red wine
- Seafood Pasta:
- 8 oz white fish
- 8 oz med raw shrimp, peeled, deveined, and tails removed
- 8 oz bay scallops, cleaned
- 8 oz fresh shucked oysters or mussels
- 1/3 c unsalted butter
- 6 tbsp dry white wine
- 1 to 2 lbs cooked fettuccine (depending on your sauce to pasta preferance)
- 1/2 c heavy whipping cream
- 1 1/2 c spicy sauce (recipe above)
- Grated Parmesan cheese

Preheat the oven to 350 degrees F
- 1/4 pound bacon
- 1 cup fresh bread crumbs
- 2 large Vidalia onions, peeled and sliced into 1/4-inch thick rounds
- 4 large green tomatoes, sliced 1/4-inch thick
- Kosher salt and freshly cracked black pepper
- 6 ounces sharp white Cheddar, grated, about 1 1/2 cups

- Creamy Onion Gravy:
- 1 tablespoon canola oil
- 1 large onion, finely chopped
- 2 large carrots, finely chopped
- 1 celery rib, finely chopped
- 2 garlic cloves, minced
- 1 1/2 cups panko bread crumbs
- 4 large eggs
- 2 tablespoons Dijon mustard
- 2 tablespoons ketchup
- 2 tablespoons Worcestershire sauce

- Kosher salt and freshly ground black pepper
- 3 pounds ground beef chuck
- 1 pound ground pork
- 1/2 pound Monterey Jack cheese, cut into 1/2-inch cubes
- 2 tablespoons unsalted butter
- 2 tablespoons extra-virgin olive oil
- 2 large white onions, thinly sliced (about 6 cups)
- 1/4 cup all-purpose flour
- 1 quart chicken stock or low-sodium broth

- 1 (4 1/2- to 5-pound) boneless pork loin roast, trimmed and tied at 1-inch intervals

- 1 tablespoon vegetable oil
- 1 (14-ounce) can whole berry cranberry sauce
- 1/2 cup dried cranberries
- 1/2 cup orange juice
- 3 (3-inch-long) strips orange zest, trimmed of white pith
