Preheat oven to 325 degrees F
- 1 tablespoon butter or margarine
- 3 cups cooked long-grain white rice
- 1/2 cup grated mild cheddar cheese
- 1/4 cup grated Monterey Jack cheese
- 1/4 cup grated Gouda cheese
- 1/2 cup diced red bell pepper
- 1/3 cup diced onion
- 1/4 cup thinly sliced green onion
- 1/4 cup chopped parsley
- 1 teaspoon salt
- 1/4 teaspoon white pepper
- 3 eggs, well beaten
- 1 1/2 cups milk
- 1/2 teaspoon Worcestershire
- good dash of hot red pepper sauce
Lighter Swedish Meatballs

Preheat oven to 350 degrees F
- For the meatballs:
- 1 pound lean ground beef or ground turkey
- 1 large egg
- 1/4 cup fat-free milk
- 1/3 cup fine dry bread crumbs
- 2 teaspoons minced onions, dry (recommended) or fresh
- 1 teaspoon kosher salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground allspice
- For the sauce and serving:
- 2 tablespoons butter
- 2 tablespoons flour
- 2 teaspoons beef bouillon granules
- 1/8 teaspoon ground black pepper
- 2 cups fat-free milk
- 2 cups cooked pasta, egg noodles or rice

- 1 cooking onion, diced small
- 1 bell pepper (any color), diced small
- 2 cups cooked black beans or 1 (16-ounce) can black beans, drained and rinsed
- 2 cups frozen corn
- 2 cups shredded fully cooked chicken. This chicken is perfect.
- 1/4 cup chopped fresh cilantro (optional)
- 2 cloves garlic, peeled and minced or pressed (or 1/2 teaspoon granulated garlic or garlic powder.)
- 1 tablespoon plus 2 teaspoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons salt
- 3 cups shredded cheese. I prefer a combination of Cheddar, Monterey Jack and Queso Blanco, but use what you prefer and have available.
