Hoppin' John - Black Eyed Peas

Make Hoppin' John for New Years Eve to bring good luck to you and the ones who dine on a bowl or two
- 1 tablespoon olive oil
- 1 medium yellow onion, minced
- 3 garlic cloves, minced
- 1 tablespoon zatarains creole seasoning (http://www.zatarains.com/products/spices-and-extracts/creole-seasoning.aspx)
- 1 pound collard greens, stems removed, washed, dried and sliced thinly
- 1/2 red pepper, small dice
- 1/2 pound bacon, minced
- 1 12 ounce package frozen black-eyed peas
- 1 1/2 cups long grain brown rice
- 3 cups chicken stock
- 5 green onions, finely minced
Baked Eggs with Ham, Kale and Mushrooms

Preheat the oven to 400. Lightly oil 2 small (single serving) baking dishes
- 1 tablespoon olive oil
- 1/4 lb brown mushrooms, cleaned and sliced
- 1 small shallot, minced
- 10 kale leaves roughly chopped
- 4 ham slices
- 4 eggs
- 1/2 cup cheddar cheese, grated
- 4 tablespoons heavy cream
- maldon salt
- black pepper
- 3 green onions, minced
Hot Buttery Lobster Rolls

Fill a large stock pot with hot water, add the quartered lemon and bring to a boil over high heat
- 1 1/2 pound live lobster (or if you are in a pinch, on a budget, or can’t find live go ahead use frozen tails – precook according to directions on package)
- 1 lemon, cut into quarters
- 1 celery stalk, minced
- 3 green onions, minced
- 1/4 lemon juiced
- 1/4 cup good quality butter, melted
- 4 hot dog buns
- extra butter for the buns
Grilled Duck Breast with Cherry Dipping Sauce

- 2 boned and skinned duck breasts, wild if you have access to
- 2 tablespoons soy sauce
- 1/4 cup canola oil
- 1/2 teaspoon fresh ginger, finely minced
- 1 teaspoon fresh garlic, finely minced
- 1/4 teaspoon fresh ground black pepper

Chutney Chicken Lettuce Cups

Pull the meat from the chicken carcass, discarding the skin and bones
- 1 3-pound roasted chicken
- 1 medium red onion, cut into -inch dice
- grated zest of 1 large lime
- Juice of 3 large limes, or more to taste
- 2 jalapeno chiles, seeded and minced, or hot sauce to taste
- 4 ozs major grey chutney, cut into bite-size pieces if necessary
- 1/2 cup mayonnaise
- kosher salt to taste
- fresh black pepper
- 2 large stalks celery, medium dice
- 1 head red leaf butter lettuce, leaves separated, washed and patted dried
- 1 large bunch fresh basil, washed and patted dried
- 1 large bunch fresh cilantro, washed and patted dried
- 8 radishes, thin sliced
Pork Tenderloin with Grilled Pineapple Salsa

- 1 lb. Chicken Thighs
- 2 T. Olive Oil
- Salt - to taste
- Pepper - to taste
- 3 Cloves of Garlic - minced
- Half of Lemon - juiced
- 3 T. Fresh Herbs of choice
Drunken Halibut

In a small jar with a lid, combine everything except the halibut
- 5 tablespoons fresh squeezed lime juice
- 3 tablespoons mezcal
- 2 tablespoons olive oil
- 1/8 cup minced cilantro
- sprinkle of salt
- sprinkle of pepper
- 1 pound fresh pacific halibut
Chicken Piccata

In a large frying pan, heat the olive oil, over medium heat
- 4 chicken thighs, skinless, or the cut of your choice (you may need to adjust cooking times)
- 5 cloves of garlic, thinly sliced
- 1 small shallot, finely minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, finely minced
- 5 plump sun-dried tomatoes, roughly chopped
- 2 medium lemons, one sliced into slices, the other used for juice
- 1/2 cup white wine
- 1/2 cup chicken stock
- 1 tablespoon capers, drained
- kosher salt
- black pepper
Granny Smith Apples, Brussels Sprouts and Pancetta

- 4 ounces pancetta, rough dice
- 20 brussels sprouts, outer leaves removed, quartered
- 1 granny smith apple, peel left on, cut into medium dice
- 2 medium shallots, thinly sliced
- 2 tablespoon olive oil
- kosher salt to taste
