Chicken Normandy

In a large frying pan, heat the olive oil, over medium heat
- 4 chicken thighs, skin on
- 1/2 medium yellow onion, finely minced
- 1 garlic close, finely minced
- drizzle of olive oil
- 16 oz bottle hard apple cider, preferably from the normandy region
- handful of crimini mushrooms, cleaned and cut in half
- 1/4 cup heavy cream
- kosher salt to taste
- fresh cracked black pepper
- italian parsley, for garnish

- 6 chicken thighs
- kosher salt
- paprika (I like to use ezpeletako bipera)
- olive oil
- 1 shallot, minced
- 2 carrots, scrubbed clean, medium dice

- 1/4 lb green beans, snapped in half
- 1 can chick peas, rinsed and drained
