Braised Beef Short Rib and Kabocha Pumpkin Stew

Ribs should not be saved for summer alone
- 4 medium sized beef short ribs
- 3 tablespoons olive oil
- 3 tablespoons ancho chili powder
- 1 tablespoon salt
- 2 teaspoons pepper
- 1/2 large yellow onion, minced
- 3 garlic cloves, minced
- 12 oz heavy ale or other dark beer
- 6 dry farmed or roma tomatoes, washed and left whole
- 1 kabocha pumpkin, peeled and cut into chucks
- kosher salt, to taste
- black pepper, to taste
Shrimp Scampi

Peel the shrimp. Wash and set aside to dry
- 1 pound shrimp with shells on (they have more flavor)
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, finely minced
- 1 small shallot, finely minced
- zest from one lemon
- juice from one lemon (use the same lemon for zest and juice)
- 1/2 - 1 teaspoon red chili flakes
- 1/4 cup white wine
- 1 tablespoon parsley, minced
- maldon salt
Basque Style Clams

Scrub the shells of the clams, then soak in cold water for 30 minutes
- 10 pounds littleneck clams
- 2 heads roasted garlic, pulp only
- 6 cloves garlic, minced
